  • 2 cups of cauliflower florets (phoolgobhi)
  • 1 cup green peas (hari matar)
  • ½ cup carrots, diced (about ½-inchpieces)
  • 1 medium zucchini, cut into bite-size pieces (withskin)
  • 1 cup paneer, cut into small cubes
  • 6 medium tomatoes
  • ½ inch ginger
  • 1 green chili
  • 2 tbsp oil
  • ½ tsp cumin seeds (jeera)
  • 1/8 tsp asafetida (hing)
  • ¼ tsp turmeric (haldi)
  • ¼ tsp red chili powder
  • 1 tbsp coriander powder (dhania)
  • 1 tsp salt (adjust to taste)
  • 1 tsp sugar
  • 1 tbsp cornstarch
  • ½ tsp garam masala
  • 2 tbsp cilantro, finely chopped (haradhania)

Instructions

Preparation

  • Mix the cornstarch with ¼ cup water and set aside.
  • Blend 5 sliced tomatoes with ginger and green chili to make a smooth puree.(Tip: Remove chili seeds for a milder taste.)
  • Slice 1 tomato lengthwise into 8 to10 pieces and set aside.

Method

  • Heat oil in a pan. To check if it’s ready, add one cumin seed, if it cracks right away, the oil is hot.
  • Add cumin seeds and asafetida. As the seeds crackle, add the tomato puree.
  • Add coriander powder, turmeric, red chili powder, salt, and sugar. Mix well.
  • Cover and cook for about 5 minutes, until the gravy thickens slightly.
  • Add all the vegetables and ¼ cup water. Cover and cook on medium heat for about 10 minutes. Stir occasionally.
    (Vegetables should be tender, not mushy.)
  • Add paneer and gently mix.
  • Stir in the cornstarch mixture and cook for 2 more minutes to thicken the gravy.
    (Add a little hot water if the gravy becomes too thick.)

  • Grind the dals along with cumin seeds, whole coriander, black pepper, green chili, and ginger to a coarse paste without adding any water.
  • Transfer the mixture to a bowl. Just before frying, add salt and chopped spinach, as both release water. Mix everything well.
  • Shape the batter into small patties.
  • Heat oil in a frying pan over medium heat. To check if the oil is ready, drop a small amount of batter into the oil, it should come up slowly.
  • Gently drop the patties into the oil without overlapping. Fry until they turn golden brown and crispy on all sides.

    • Microwave the mixture for 40 seconds. Remove the bowl from the microwave and mix itagain thoroughly. The mixture should have a very soft dough-like texture. As it cools, itwill become slightly drier. If it is too soft microwave again for 10 seconds more seconds.
    • Make sure the mixture does not become too dry, it should remain soft and moist, so it iseasy to spread over toast. If it is needed add little heavy cream.

    Making Caramel Sauce

    • In a small pan add the sugar and cook on medium-low heat until it melts and turns light golden.
    • Carefully add the cream and stir continuously. The mixture will bubble at first but will quickly become smooth. Cook for about 30–40 seconds until the caramel sauce becomes silky.

    I decided to make these vegetable patties because my grandson keeps requesting them again andagain and how can a Dadi ever say no? The moment he walks in, the first question is always,“Dadi, are you making those patties today?” And just like that, I’m shredding the vegetables.These patties are made with simple, wholesome ingredients, shredded potatoes, carrots, zucchini,and protein-rich moong dal, lightly spiced and mixed with lots of love. Crispy on the outside,soft on the inside, and packed with vegetables, they disappear as soon as they hit the plate.Sometimes he enjoys them as a snack, and sometimes he adds a slice of cheese and turns theminto his favorite sandwich. Watching him enjoy homemade food so happily reminds me that thesimplest recipes create the sweetest memories.

    • 1 cup shredded potatoes I am using Yukon potatoes
    • ½ cup shredded carrots

    Method: How to Cook Rice

    • Wash and soak the rice for 20 minutes. Drain and set aside.
    • Heat oil in a pan over medium heat. Add cumin seeds and let them crackle.
    • Add asafetida, dry red chilies, and black pepper. Stir for a few seconds until it is aromatic.
    • Add chopped spinach and cook for 1 to 2 minutes until it wilts and blends with the spices.
    • Add drained rice, salt, and water. Mix gently.

    I am truly excited! Stuffed parathas sound difficult to make and time consuming and
    honestly, they are. They’re one of the most loved Indian breads, but making the dough
    and rolling the parathas is the part that creates the most work, the most mess, and the
    most cleanup.
    That’s why I’ve been experimenting with easier ways to make them while keeping the
    taste true to the original. You can even call it semi-homemade because I’m using store-
    bought uncooked rotis. I was so happy and surprised when I came up with this quick,
    simple method. In the end, your own finishing touch makes all the difference!
    Today, I am sharing recipes for two different parathas:
    Aloo (Potato) Paratha — my favorite classic
    Gobhi (Cauliflower) Paratha — my husband’s favorite

    Apple pie is such a treat! It’s impossible to stop eating, especially when it’s made just right and served hot with vanilla ice cream. When I first came to the USA in January, it was very cold. As a vegetarian, we didn’t have too many options at that time, but we were treated to our first dessert: hot apple pie topped with vanilla ice cream. What a treat it was! I fell in love with it instantly.
    Over time, I learned to make apple pie and made it many times, but it has been a while since then. Recently, I decided to give it an Indian twist. I wanted to make it easy to prepare, so I decided to make it in paratha style, filled with sweet and sour apples. For flavoring, I used traditional spices like cinnamon, nutmeg, and cloves. You may try other fruits of your choice, such as pears and peaches—these are two I have tried. But I must admit, for me, nothing beats the sweet and sour apple flavor paired with the aroma of cinnamon.

    Palak Paneer is perhaps the most popular paneer dish in North India and is a favorite in Indian restaurants. Creamy spinach paired with paneer makes for a delicious main course. This recipe has always been one of my favorites, and I can prepare it quickly.
    Although I’ve made this recipe before, I now want to simplify it by using just a few ingredients. Even after so many years of cooking, I’m still learning and striving to keep things simple, healthy, nutritious, and flavorful.
    This dish is made with blanched spinach, which helps retain its vibrant green color. I didn’t know why blanching was used in cooking, but this is all part of the learning process. Palak Paneer pairs perfectly with roti, naan, or paratha.

    Ingredients

    • 5 oz spinach washed and clean, about 6 cups packed spinach
    • 1 cup paneer cubed into bite size, about 4oz of paneer
    • 1 green chili chopped
    • 1 tbsp oil
    • 1/2 tsp cumin seeds – jeera
    • 1/8 tsp asafetida – hing
    • 1 tsp coriander powder – dhania
    • 1/4 tsp turmeric – haldi
    • 1/2 tsp salt adjust to taste
    • 1/2 tsp sugar
    • 1 tbsp whole wheat flour
    • 1/4 cup heavy cream
    • 1/4 cup finely chopped tomato
    • 2 tbsp paneer shredded for garnishing

    Instructions

    • First blanch the spinach, this helps to keep the spinach color bright. To blanch the spinach, boil about 6 cups of water in a saucepan, and let the spinach boil for one minute. Drain the water and put the spinach in ice cold water for about two minutes. Drain the water.
    • Blend the spinach, ginger and green chili. Spinach should be creamy.
    • Soak the cubed paneer in about three cups of hot water, for about 5 minutes. This helps to give the paneer a soft texture. Set it aside.
    • While cooking, spinach can splatter, use larger saucepan. Heat the oil in a saucepan, over medium high heat. Test the heat by adding one cumin seed to the oil; if it cracks right away it is ready.
    • Add cumin seed, and asafetida. After cumin seeds crack, add blended spinach and stir. Add coriander, salt, and sugar, stir.
    • After spinach comes to boil lower the heat to low, and let the spinach cook for about 5-6 minutes partially cover the pot, because spinach will splatter. I don’t cover the pan fully because this helps keep the green color of spinach.
    • Mix the flour to 1/2 cup of water and add to the spinach, also add the cream. Mix it well and let it cook for five minutes. If needed add a little more water.
    • Drain the paneer and fold it gently with spinach and let it simmer for about five minutes.
    • Palak paneer is ready, add the tomatoes and turn off the heat. Garnish it with shredded or crumbled paneer.

    • In a bowl mix all the dal, wash them changing water 2-3 times. Soak dal in four cups of water for 6-8 hours.
    • Drain the water. Blend the lentils (dal) with green chili and ginger, adding water slowly as needed to make a smooth batter. Note: The less water, the smoother the batter.
    • Mix the salt and cumin seeds into the batter. Add water as needed. The total water added will be about ½ cup, just enough to achieve the consistency of pancake batter.
    • Place a non-stick skillet over medium-high heat. Test by sprinkling a few drops of water on it. The water should sizzle right away.
    • Pour about ½ cup of the batter mixture into the skillet and spread evenly with the back of a spoon. Starting from the center, spiral outward until evenly spread, about seven inches in diameter.
    • When the batter begins to dry, gently spread one teaspoon of oil over it. Wait about 30 seconds, then flip the dosa using a flat spatula.
