Looking for an Indian fine dining experience that will excite your taste senses and take you to gastronomic bliss? Look no further than Coriander Leaf Ahlone, a paradise for exquisite tastes where the skill of tandoori cooking is unquestionably the main attraction.

Coriander Leaf Ahlone has established itself as one of Yangon’s top Indian restaurants. Their expertise in the tandoor, a cylindrical clay oven burned with charcoal, imparts their meals with a distinct smokey flavor and luscious texture that is just tempting.

But what are tandoori foods, and why should you try them as your next gastronomic adventure? Tandoori cooking is an age-old Indian technique that uses the strong heat of the tandoor to produce tasty and delicate food. The ingredients, normally marinated in yogurt, spices, and herbs, are skewered or placed in clay pots and cooked in the tandoor. This one-of-a-kind cooking process gives the meal a smoky scent and a nicely charred outside while keeping the insides pleasantly moist and flavorful.

Coriander Leaf Ahlone’s tandoori cuisine is a showcase of culinary creativity. Dive into classic dishes like the ever-popular tandoori chicken, which has delicious meat laced with a symphony of spices. Or, taste the melt-in-your-mouth flavors of tandoori lamb kebabs, which are seasoned to perfection and have a smokey depth. Vegetarian alternatives abound as well, with treats such as tandoori paneer tikka masala, which has cubes of Indian cottage cheese drenched in a creamy and savory sauce, and tandoori aloo, which transforms spiced potatoes with the enchantment of the tandoor.

For a flavor of the sea, try the fish tikka, which marinates and cooks fresh fish to exquisite perfection. Don’t miss the tandoori mushrooms, a vegetarian dish with a delicious meaty texture and smokey aroma.

Do you crave something heartier? Look no further than seekh kebab, which is juicy minced lamb or chicken formed into kebabs and grilled in a tandoor. Feeling a little more adventurous? Try the chicken tikka, a boneless chicken dish marinated in yogurt and spices that provides a bright contrast between its charred outside and succulent inside.

The tandoori malai tikka is a must-try for people who like a little cream. Chicken chunks are marinated in yogurt, cream, and spices to create a dish that is both rich and savory. And for seafood aficionados, the tandoori prawns are a delicious twist on a classic cooking technique.

The spell doesn’t end there. Coriander Leaf Ahlone serves a great range of accompaniments to accompany their tandoori entrees. Pair your chosen dish with creamy raita, tangy chutneys, or fluffy naan bread, such as tandoori naan, which is infused with the smokey taste of the tandoor itself. This symphony of textures and tastes will have you wanting more.

So, the next time you’re in Yangon and looking for a lovely Indian fine dining experience, head to Coriander Leaf Ahlone. Take a gourmet journey into the world of tandoori cooking and experience the aromatic sensations that await.

Make Restaurant-Style Chicken Shami Kabab at Home

If you think of chicken shami kabab, you probably picture juicy, flavorful kebabs that melt in your mouth. But who says you have to go to a restaurant to enjoy this delicious food? Today, we’ll show you how to make chicken shami kabab at home that tastes like it came from a restaurant!

This recipe goes beyond the typical β€œchicken kebab” experience. One thing that makes shami kababs special is that they have cooked lentils (chana dal) and a mix of aromatics that make a wonderful mix of tastes and textures. It’s really not that hard, don’t worry!

Here’s what you’ll need for your chicken shami kabab adventure:

Chicken Shami Kabab Ingredients:

  • 500 gms boneless, skinless chicken thighs (minced)
  • Β½ cup chana dal (soaked for at least 30 minutes)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 green chili, chopped (optional)
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • Β½ tsp garam masala
  • Β½ tsp red chili powder (adjust to your spice preference)
  • Salt to taste
  • 1 egg, beaten
  • Fresh coriander leaves, chopped (for garnish)
  • Oil for shallow frying

Chicken Shami Kabab Recipe:

1. Put the chopped onion, ginger, garlic, green chili (if using), soaked chana dal, and minced chicken in a big bowl.

2. Put in the salt, red chili powder, cumin powder, garam masala, and coriander powder. Make sure all the ingredients are spread out properly by mixing them well.

3. Let me tell you how to get that restaurant-style texture: Use a meat grinder or food mixer to grind the mixture. This makes a base for your kebabs that is smooth and stays together.

4. If the mixture seems dry, add the beating egg for additional moisture. But the chana dal should be enough to hold everything together, so the egg is optional.

5. Take the mixture and form it into small, flat cakes. For even cooking, aim for a width of about Β½ inch.

6. Set a pan on medium heat and add oil. Move the kababs around in the pan a little at a time once it’s hot.

7. For 3 to 4 minutes on each side, or until fully cooked and golden brown.

Tips for Restaurant-worthy Shami Kababs:

1. For a good mix of taste and texture, use both chicken breast and thigh meat.

2. Do not cook the kababs too long! On the inside, they should be juicy and soft.

3. Be creative with the toppings! A little bit of mint sauce or chopped fresh coriander leaves makes it taste even better.

The chicken shami kabab is more than just a starter. Serve them on a bed of fluffy rice or naan bread for a complete and satisfying meal.

  • Yogurt consumption may or may not be a healthy choice, depending on who is drinking it and what sort.
  • Yogurt contains significant amounts of protein, calcium, vitamins, living cultures, and probiotics, which can enhance the gut flora.
  • These might safeguard teeth, bones, and the digestive system.

Fast facts about yogurt

  • Milk is fermented with a yogurt culture to create yogurt.

  • The health advantages of heat-treated yogurt are diminished since the products lack live microorganisms. For instance, raisins with yogurt on them.
  • Yogurt contains calcium, riboflavin, potassium, magnesium, vitamins B6 and B12, and calcium. The amounts vary depending on the type.

Types of Yogurts

1.β€œTraditional” Yogurt

By adding microorganisms to milk, yogurt is made and thickened, giving it its well-known tart flavor. In order to stop curds from developing, milk is heated. The mixture is then chilled before adding bacterial culture. Probiotics, which are live, active microorganisms found in most yogurt, support gut and intestinal health. Although it is less thick than other yogurt options because it is still too thick to swallow.

2. Greek Yogurt

This is strained to eliminate the liquid and whey after the yogurt base has been made, giving it a thicker consistency than regular yogurt. Greek yogurt is a well-liked alternative to sauces used in savory foods because of its potent sour flavor. (Did you know that ricotta cheese consists of the liquid and whey extracted from Greek yogurt?)

3. Australian Yogurt

Australian yogurt is unstrained, just like regular yogurt. Greek yogurt is thicker than standard yogurt but has a creamier texture. Since it is cooked more slowly and for a longer period of time than regular yogurt.

4. French Yogurt

Instead of being created in a large vat and then divided into containers, French-style yogurt is cultured in the individual-sized containers it is served in. It is much like conventional yogurt, but it is less sweet than other yogurts and has a smooth, creamy texture.

5. Skyr/Icelandic Yogurt

Greek yogurt is notably thinner and less tart than Icelandic yogurt, or Skyr. There is disagreement over whether Skyr belongs in the category of yogurt varieties. It may be claimed that it is cheese because of the way the process causes curds to form. Skyr is promoted as Icelandic yogurt in the United States because, whatever it is properly called, it is eaten like yogurt. Skyr is one of the thickest yogurts on the market since it has been strained four times.

6. Lactose-free Yogurt

There is yogurt available without lactose, even if yogurt with live, active cultures is already a suitable option for those who are lactose intolerant. A unique enzyme that breaks down the lactose in milk is available in the lactose-free yogurt. Your body does not feel the discomfort of lactose intolerance in the absence of this lactose. Because the lactose has only been broken down outside of your body, it still tastes like regular yogurt.

7. Drinkable Yogurt

There are many alternatives available for drinkable yogurts, not just in terms of flavors. However they come in a variety of consistency levels, from a thinner consistency more like skim milk to a thicker consistency more akin to classic yogurt. Additionally, you can decide whether you want to savor a sour or sweet yogurt. When traveling or on the go, this sort of yogurt is a terrific option for a healthy snack.

How Do They Work?

You put the food within an oval chamber in a tandoor. Food is baked or cooked in traditional clay ovens as it comes into contact with the fire blazing inside the tandoor. This gives the food a ton of flavor and smoke.

The dripping liquid of the herbs, spices, and other special flavors will fall directly to the wood or charcoal that is burning inside it when you mix them. As a result, the tandoor will be able to give your food a smoky, highly flavorful flavor that no other method of cooking can match.

The majority of meals are ready using metal skewers, which sort of hang the food in the center of the tandoor while it cooks. As long as food comes in contact with the correct heat, it all cooks at the same rate. As the food contacts with live heat inside the clay oven that is over 400 degrees Celsius during traditional tandoor cooking, the food cooks significantly more quickly than with other cooking techniques. What Is Tamarind?

Tamarinds are a type of tropical fruit that are produced by the tamarind tree, which is native to Africa but also thrives in other tropical regions like India. The tamarind tree produces pods with seeds and fibrous pulp inside that resemble beans. These pods’ pulp matures into a paste-like texture and takes on a sweet-sour flavor.

Although it can also be found as raw pods, a pressed block, and tamarind concentrate, tamarind is typically bought as a paste or purΓ©e. The use of tamarind in Asian, Mexican, and Caribbean cuisines is undoubtedly its best-known application.

What Does Tamarind Taste Like?

Depending on the other ingredients it is paired with, tamarind’s flavor can range from sweet and sour to acidic and tart. 3.In Indian curries and other hot dishes, tamarind is sometimes used with coconut milk to decrease its sour flavor. However other spices that are typically included in tamarind curries include ginger, turmeric, coriander, and garam masala.

4.The tamarind seed is edible even though it isn’t a common part of the tamarind fruit. While pulverized seeds are a component of Indian sweets, the seeds are roasted in the Caribbean as a snack.

5.Fish sauce, sugar, vinegar, and tamarind are the main components of the base sauce for pad thai.

6.Despite its strong flavor, tamarind can be the major component in a cuisine. In the Caribbean Islands, where tamarind trees have thrived since the fifteenth century, tamarind balls are a popular treat when paired with sugar, which can diminish the acidic flavor.

Field preparation:

Form beds and canals and fine-tooth the main field (for irrigated crops). Place the separated seeds 20 x 15 cm apart. The seeds will begin to sprout in 8 to 15 days.

For crops that will be grown using rainwater, presowing seed hardening treatment. It is done with potassium dihydrogen phosphate at 10g/lit of water for 16 hours. Azospirillum should be applied to seeds in three packets per hectare. To manage the wilt disease, seeds must be treated with 4 g/kg of Trichoderma viride.

Seed Treatment:

Soak the seeds in water for 12 hours. Treat the seeds with Azospirillum at 1.5 kg /ha. For better crop establishment + Trichoderma viride at 50 kg/ha to control wilt disease.

Pre-sowing seed hardening treatment with Potassium Dihydrogen Phosphate at 10 g/lit of water. For 16 hours is to be done for the rainfed crop.

Manuring:

Basal:

FYM 10 t/ha; 10 kg N, 40 kg P and 20 kg K for rainfed and irrigated crops.

Top dressing:

Top dressing may be done at 10 kg N/ha 30 days after sowing for the irrigated crop only.

Irrigation:

First irrigation should be given immediately after sowing. The second on the third day and subsequent irrigations at 7-10 days interval.

After cultivation:

A pre-emergence spray of herbicide Fluchloralin 700 ml in 500 lit/ha.Β  Thinning is done 30 days after sowing. Subsequent weeding is done as and when necessary. Leave 2 plants per hill. SprayΒ  250 ppm one month after sowing for inducing drought tolerance in rainfed crops

METHODS:-

  • (0.3 m) away, 1/4 inch (0.6 cm) apart, and 6 to 8 inches (15.2 to 20.3 cm) apart. Make careful to water cilantro seeds often since they require a lot of moisture to sprout. Each week, they require roughly an inch of water. They ought to start growing in two to three weeks.
  • You may treat the seedlings with compost or organic fertilizer after they are about 2 inches (5.1 cm) tall. You only need approximately 1/4 of a cup of fertilizer for every 25 feet (7.6 m) of growing space, so be cautious not to over fertilize.
  • When the seedlings are 2 to 3 inches (5.1 to 7.6 cm) tall, trim them out to prevent the cilantro plants from being too crowded. Remove the lesser plants, leaving the strongest ones to expand, and space each plant 8 to 10 inches (20.3 to 25.4 cm) apart. The smaller plants can be consumed and used in cooking.
  • When the stems are between 4 and 6 inches (10.2 to 15.2 cm) tall, or when the plant is close to the ground, you can harvest cilantro by snipping off individual leaves and stems from the plant’s base. Use the young, fresh shoots for cooking rather than the more mature, fern-like leaves, which have a harsh taste. To avoid weakening the plant, don’t remove more than one-third of the leaves at once.Β
  • The plant will continue to grow for at least two or three more cycles after the leaves have been picked.

Guide to India Spices

A guide to Indian spices can help you understand more about the heart of Indian cuisine because spices and condiments are the lifeblood of every Indian meal. A collection of Indian spices as well as images and brief descriptions are provided in this introduction to Indian spices. It is intended to provide a summary of the various spices that can be used in Indian food.

Indian spices have a variety of uses, including adding heat, layering flavors to create depth, and even adding a little color to food. They also provide therapeutic or health advantages. You can get more knowledge about the spices from one of the best restaurants β€œCorriander Leaf”.

Overview Of Flavoring Indian Food

Indian cuisine relies heavily on spices, and they have a long and illustrious history of doing so. Almost all meals, whether they be simple or elaborate, will include a variety of spices. Contrary to common belief, spices are used to flavor food rather than necessarily make it hot. Every Indian spice has a really lovely, distinct flavor, and you may use multiple spices to create a dish’s own, delicious combination of flavors.

Essential Spices:

The spices you should keep in masala dabba, an Indian spice box, are the ones you need to start cooking. The bulk of fundamental Gujarati/North Indian cuisines may be prepared using them and a few more spice mixtures.

Herbs:

Several herbs are used rather frequently in Indian cuisine. For simplicity of use, those have been listed separately.

India spices blends:

The predominant spice mixture is garam masala. We’ve included it on this list even though it’s a blend and not a spice because it’s frequently used. In an emergency, a garam masala alternative can be used if you run out. If you enjoy cooking Indian food, Indian spice blends might make some of your dishes simpler to prepare.

Corriander Leaf will examine some of the popular Indian spices and seasonings used to give Indian food its distinctive and delectable flavors in this post. Below is a list of Indian spices with photos.

Salt, sugar, and lemon juice are standard ingredients used in all cuisines but are not listed because they contribute to the balance of many Indian meals.

Techniques to use Spices

One of the best ways to give your cuisine a little flair is by using spices. You may transform your go-to meal into an exotic culinary experience by using the appropriate blend of spices. Spices have been mentioned on a few occasions, including in a reader query and an introduction blog article. We’ve also witnessed foods come to life with the perfect combination of spices. We wanted to elaborate on the subject as there appears to be some interest and demonstrate how to utilize spices to elevate any dish from a 5 to a good 10.

Getting Started as a Spice Adventurer

If you’re new to spices and want to try a variety without spending a lot of money or wasting any, the following tips from Corriander leaf will be useful.

1. Obtain whole spices and grind them as necessary

Without forcing you to make any more changes to your seasoning procedures, this alone will enhance the flavor and quality of your cuisine. Additionally, it will enable you to make some financial savings because whole herbs and spices are more affordable than their pre-ground counterparts. Spices are typically less priced in ethnic grocery aisles.

In contrast to a universal powder, which in my opinion isn’t all that exciting, when you are in charge of grinding, you may change the texture to best fit your needs. It’s fascinating to experiment with different grinding techniques because you don’t always have to use a spice mill and grind to a fine powder.

2. Let Go of Your Old Spices

You know those little spice containers that seem to be a common sight in kitchens? I’ll turn around so you can quietly throw them away. Prior to even arriving at the packing plant, where the tiny bottles were filled and displayed on the adorable little carousel, it is hard to tell how recently the spices were ground. After all of this, they waited an absurdly long time on a store shelf before you adopted them and gave them a loving home. Before you learn anything about spice usage and seasoning combinations, throw those old ones away.

3. Buy Spices in Small Amounts

The goods will be sent to you at its freshest thanks to this method of purchase because it is more likely to be in constant motion than boxed sets of ground spices. What goes in your pantry and how long it stays there are additional choices you have. It is advised against stocking up on too many spices because they do expire and time is the enemy of spices. Empty spice jars, which are often found in the bulk department, are a much better choice for storing spices in the pantry than flimsy plastic bags. Spices should be kept away from heat and light in airtight containers.

4. Toast Whole Spices Before Grinding Them

When spices are toasted, they might even develop a new level of flavor. Cumin, coriander, cinnamon, and most other β€œwarm” spices benefit significantly from a good toasting before grinding or crushing, particularly if they will be used in a puree or soup where they won’t be roasted alongside the dish. It’s quite easy to do and substantially improves flavor. Spices should be cooked on a high heat in a dry (no oil) skillet.

How to Use Spices

  • To give them more time to develop their flavors, most spices should be applied early in the cooking process.
  • Always keep in mind to cut back on the salt when cooking with spices like curry and cinnamon to prevent your meal from feeling too salty.
  • Long before making cold meals, add spices.
  • Chili, garlic, curry, or paprika shouldn’t be added to sizzling hot oil because doing so could lead them to turn bitter. To release their flavors without losing them, I lightly sautΓ© them. Win-win.
