Description

This meatloaf stays tender, juicy, and full of flavor thanks to a beef and pork blend and a steady cook. Finished with a rich glaze, it’s a dependable recipe that delivers every time.


Ingredients

  • 1lb ground beef 90/10
  • 1lb ground pork
  • 2 eggs – lightly beaten
  • 1 1/2 cup bread crumbs
  • 1 medium onion finely diced
  • 4 cloves minced garlic
  • 1/4 cup chopped flat leaf parsley
  • 1/4 cup ketchup
  • 1 Tablespoon Worcestershire sauce
  • 2 Tablespoons Killer Hogs AP Seasoning
  • 1 Tablespoon Malcom’s Italian Stallion Seasoning

Classic Meatloaf Glaze:

  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1 Tablespoon Worcestershire sauce
  • pinch white pepper
  • pinch cayenne pepper
  • pinch paprika

Instructions

  1. Combine the ground beef, ground pork, eggs, bread crumbs, onion, garlic, and parsley by hand. Add the ketchup, worcestershire and seasonings and mix thoroughly.
  2. Line a baking sheet with parchment paper and form the meat mixture into a loaf shape.
  3. Cook the meatloaf at 350Β°F using pecan pellets for 35 minutes – you can cook it in the oven if you prefer.
  4. Combine the glaze ingredients in a small bowl and brush over the top of the meatloaf. Continue to cook for an additional 25 minutes or until the internal temperature reaches 165Β°F.
  5. Remove the meatloaf from the grill and allow it to rest for 10 minutes before serving.

Notes

  • Don’t overmix – Mix just until combined. Overmixing makes the meatloaf dense instead of tender.
  • Pan vs free-form – Pan = softer, classic texture. Free-form = more surface area and better glaze.
  • Cook to temp – Cook to 160Β°F internal, not by time, for a juicy, properly set loaf.
  • Rest before slicing – Rest 10–15 minutes so it holds together and slices clean.

This is one of those recipes that proves simple still works best. The beef and pork keep it tender, the glaze finishes it right, and it’s the kind of meal people come back for. Run it once and it’ll earn a spot in your rotation.

There’s a lot of ways to cook picanha, but this one is hard to beat. The reverse sear gives you control over the doneness and lets you finish with a real crust. You end up with a juicy, even cook and a crust that gives you everything you want out of a steak.

Description

Reverse-seared picanha cooked low for even doneness, then finished hot for a perfect crust. Simple method that delivers steakhouse-level results.


Ingredients

  • 1 whole picanha (top sirloin cap)
  • Swine Life Prime Beef Rub
  • Killer Hogs Steak Rub

Instructions

  1. SEASON
    1. Light coat of Swine Life Prime Beef.
    2. Follow with a layer of Killer Hogs Steak Rub.
    3. Let sit at room temp 30–45 minutes while the grill comes up to temp.
  2. SET UP THE GRILL
    1. Indirect cooking setup (drum cooker or any grill works).
    2. Stabilize temperature at 275Β°F.
  3. COOK (INDIRECT PHASE)
    1. Place picanha on the pit.
    2. Cook until internal temp hits 128–130Β°F
    3. Usually about 1.5 hours, but go by internal temp, not time.
  4. REST + CONTROL CARRYOVER (CRITICAL STEP)
    1. Pull around 128–130Β°F and leave the probe in.
    2. Let the internal temp rise during the rest. Once it peaks and starts coming back down, go in for the sear.
    3. Open the vents on your pit, open the lid and let the fire get hot.
  5. SEAR (HOT & FAST)
    1. Place picanha back onto pit – directly over high heat.
    2. Flip every minute.
    3. Sear for 3–5 minutes total until a crust forms.
  6. REST, SLICE, SERVE
    1. Let it rest briefly and slice against the grain.

Notes

This method is all about controlling the internal temperature so you don’t overcook the picanha during the sear.

By bringing it up slowly over indirect heat, you get even doneness all the way through. When you pull it and let it rest, the internal temp will continue to rise, then eventually peak and start to fall. That’s your window.

Once it starts coming back down, the meat has stopped actively cooking, so you can hit it with high heat to build a crust without pushing it past medium-rare.

Once you run a Picanha this way, it’s hard to go back to anything else. You get full control over the doneness and a finish that eats the way it should. It’s a simple method, but it delivers every time.

Instructions

  1. Season the ribs
    – Season flanken ribs evenly on all sides with light coat of AP Seasoning and then medium coat of Gyro Hero Greek seasoning.
  2. Marinade and soak
    – Whisk together parsley, lemon juice, honey, garlic, Greek seasoning, red wine vinegar, and olive oil until combined.
    – Add ribs and toss to coat thoroughly. Cover and refrigerate for at least 3–4 hours, preferably overnight.
  3. Prepare the grill and butter baste
    – Set up a charcoal grill with a two-zone fire (hot direct side and cooler indirect side).
    – Melt butter and stir in Greek seasoning, lemon juice, and parsley. Keep warm for basting.
  4. Cook over direct heat (burn & turn)
    – Remove ribs from marinade and place directly over hot coals in batches.
    – Cook about 2 minutes per side, flipping often.
    – Baste with butter between flips and allow flare-ups to hit the meat.
    – Continue turning until the ribs develop deep caramelization with light char on the edges.
  5. Move to indirect heat
    – As each batch finishes, move ribs to the cool side of the grill, stacking loosely while remaining ribs cook.
  6. Finish and serve
    – Once all ribs are on the indirect side, close the lid and cook for about 5 minutes.
    – Remove from grill and serve immediately with a light squeeze of lemon and optional fresh parsley.

Notes

  • Burn and Turn matters – Stay with the ribs the whole time. Flip them often and don’t let them sit too long on one side or they’ll burn instead of building good char.
  • Don’t skip the marinade time – Give the ribs at least a few hours, but overnight is best. That’s what helps tenderize the meat and get that Greek flavor all the way through.
  • Butter baste is the key – Baste with butter every time you flip. It builds flavor, helps the ribs caramelize, and keeps them from drying out over the fire.
  • Expect flare-ups – Cooking directly over the coals will cause flare-ups. That’s what you want. Just keep turning the ribs so they get flame-kissed and don’t burn.

Next time you’re cooking over a hot fire, this is a good one to throw on the grill. Stay on them, keep flipping, and let the flames do their thing. That’s how you get that good char and flavor in every bite.

Description

Smoked tomahawk ribeye cooked start-to-finish on the pellet grill. No sear, just low heat, rich smoke, and juicy medium-rare steakhouse flavor every time.


Ingredients

  • 1 Tomahawk Ribeye Steak (about 3 lbs)
  • 2 Tbsp Worcestershire sauce
  • 2 Tbsp Willingham’s W’ham Original Mild Seasoning
  • 1–2 Tbsp Killer Hogs AP Seasoning (salt, pepper, garlic)
  • 1–2 Tbsp Killer Hogs Steak Rub (for texture & color)
  • Β½ stick (4 Tbsp) unsalted butter, cut into pats

Instructions

  1. Trim the Steak
    Lightly trim any big pockets of fat around the edges and clean up the bone for presentation.
  2. Season Generously
    Rub the steak all over with Worcestershire sauce as a binder.
    Apply a medium coat of W’ham Original Mild Seasoning for color and base flavor.
    Add a layer of Killer Hogs AP Seasoning to build that salt, pepper, garlic profile.
    Finish with a layer of Killer Hogs Steak Rub for texture and crust.
  3. Rest & Fire Up the Grill
    Let the steak sit out while you fire up your pellet grill to 250Β°F. This gives the seasonings time to melt in and lets the steak come up to room temperature before cooking.
  4. Smoke the Tomahawk
    Place the steak on the pellet grill and insert a probe thermometer into the thickest part.
    Set your first target internal temp to 120Β°F.
    Once it hits 120, reset your probe to 128Β°F and monitor closely.
  5. Rest with Butter
    Place pats of butter and a light sprinkle of Steak Rub on a platter.
    Remove the steak from the grill at 128Β°F and place it directly on butter.
    Tent loosely with foil and rest for 10 minutes.
  6. Slice & Serve
    Remove the steak from the bone, then slice across the grain. The melted butter and drippings combine to make a rich, flavorful sauceβ€”spoon that over the slices before serving.

I’m not trimming… I want to keep all the fat on this Tri Tip for flavor. Smother it in TX Brisket Rub (or classic salt & pepper), drop it straight over glowing coals on a Santa Maria grillβ€”press it into the grate to carve a deep sear. Flip every few minutes. Ingredients

  • 1 whole Tri-Tip roast (untrimmed)
  • Killer Hogs TX Brisket Rub (or salt and coarse black pepper)

Instructions

  1. Don’t Trim a Thing
    Leave all the fat and sinew on that big, beautiful tri-tip. That’s how Mr. Al Frugoniβ€”the king of live fireβ€”does it, and we’re sticking to it.
  2. Season Heavy
    Hit it generously with TX Brisket Rub (or your favorite salt & pepper blend). Don’t be shyβ€”we want a big crust.
  3. Build the Fire
    Start a fire using wood splits and lump charcoal. Once you’ve got a solid coal bed, rake the coals under your cooking grate and let it heat up.
  4. Sear Over High Heat
    Place the tri-tip directly over the hot coals and press it into the grate for good contact. Flip every 3–4 minutes to build a deep sear and bark on both sides.
  5. Finish Over Medium Heat
    Once seared, move it a bit higher above the coals or to indirect heat. Keep flipping every few minutes until the internal temp hits 125–130Β°F for medium-rare.
  6. Rest and Slice
    Let it rest for 20 minutes. Then slice it against the grainβ€”split it down the middle crook first, since the grain runs different ways.

This tri-tip is all about cooking beef the old-school wayβ€”over a live fire. Grilled Beef Flaken Ribs – Flaken Ribs have a rich, beef flavor – and when you take the time to marinade them and then chargrill them directly over hot coals, you get a delicious bite of beefy goodness!


Ingredients

  • 4lbs flanken-cut beef ribs
  • 1 bunch green onions – chopped divide the green and white parts
  • 2 heaping teaspoons minced garlic
  • 2 teaspoons minced ginger
  • 1/4 cup soy sauce
  • 1/4 cup worcestershire sauce
  • 1/8 cup balsamic vinegar
  • 2 Tablespoons Hoisin sauce
  • 1 Tablespoon Killer Hogs TX Rub

Instructions

  1. Place the white parts of the onion in a mixing bowl and add: minced garlic, ginger, soy, worcestershire, balsamic vinegar, hoisin, and TX. Stir to combine.
  2. Add the beef flanken cut ribs to a large ziplock bag and pour in the marinade. Squeeze the air out of the bag and gently toss the ribs around so everything is coated in the marinade. Place the bag in the refrigerator for at least an hour.
  3. Prepare a grill for 2 zone cooking – hot side and cool side. Grill the ribs over the direct heat zone (hot side) of the grill. Work in batches so the grill isn’t over crowded. Cook the ribs on each side until they begin to char about 3-4 minutes each side. Then move them over to the cool zone until all of the ribs are char-grilled.
  4. Place the ribs on a foil lined baking sheet, wrap the foil around the top to seal off the heat, and rest the ribs for 20-30 minutes.
  5. To serve place the ribs on a large cutting board or platter and top with the green tops of the onions.

Garlic Butter Filet Mignon

Garlic Butter Filet Mignon

I started with a Whole Beef Tenderloin, then trimmed it into Filet Mignon Steaks – but you can start with Filet Mignon Steaks straight from the meat counter. To cook these steaks, I used a reverse-seared on a charcoal grill and brought them up slowly to nail the doneness. Then I moved them directly over the coals and basted with Garlic Butter while these Filets got flame-kissed over open flames.

WHAT MALCOM USED IN THIS RECIPE:

I started with a whole beef tenderloin, trimmed it myself – because they are a little cheaper and you end up with extra meat for other recipes too. After I trimmed these filets into thick steaks, I seasoned them simply – but not lightly – and set up my Primo Grill for a two-zone fire.

Started the steaks out slow on the indirect side and when they hit 115 internal I seared them directly over the hot coals and basted them with garlic butter. I like them medium rare, so I only seared them for 1-2 minutes each side (basting them with the garlic butter the whole time). Took them off, let them rest and these were some of the best steaks I’ve ever cooked!

Description

Whole Beef Tenderloin trimmed into Filet Mignon Steaks and cooked with a reverse-seared – then basted with a Garlic Butter while they get flame-kissed over open flames


Ingredients

  • 5 – 12oz Beef Tenderloin Filets (AKA – Filet Mignon Steaks)
  • 1/4 cup Worcestershire Sauce
  • 1/2 cup Killer Hogs TX Brisket Rub
  • 1 Tablespoon olive oil
  • 8 cloves garlic minced
  • 1 shallot minced
  • 2 sticks salted butter
  • 1 Tablespoon chopped parsley

Instructions

  1. Drizzle the outside of each steak with worcestershire sauce and season heavily with TX Rub (coarse salt and black pepper can substitute).
  2. Set up a grill for 2 zone cooking – hot and cool side.Β  I used my primo ceramic grill running Royal Oak Lump charcoal but any grill will work.
  3. Keep the grill between 275-300Β°F for the first stage of the reverse sear.Β Place a probe thermometer in the center of one of the filets and set each steak on the cool side of the grill to start away from the direct fire.
  4. Once the internal temperature reaches 115Β°F – about 25 minutes; remove the steaks from the grill and place on a foil lined sheet pan.Β Rest the steaks for about 15-20 minutes.Β You will notice the temp continues to climb but it will eventually stop and start to drop.Β This is where you want to do the sear stage.
  5. While the filets are resting – add a drizzle of olive oil to an iron skillet.Β Add the garlic and shallot and saute until soft – season with a little TX rub for flavor.
  6. Move the skillet off the direct heat and add the butter.Β Stir until the butter melts about 2 minutes and add the chopped parsley.
  7. Brush each filet with the butter mixture and place over the direct heat (Fire side) of the grill for 1 minute on each side.Β  Continue brushing with butter at this point and only cook until a char starts to form.Β  It should take about 1-2 minutes total each side.Β  It is important to not walk away and be extremely careful at this point because the fire will be rolling.
  8. Remove the steaks from the grill once seared and brush with additional garlic butter.Β  Rest the steaks for 5 minutes and serve.

WalMart Prime Rib

For this recipe I picked up a nice, boneless, 5lb Prime Rib Roast from WalMart for about $66… and I turned it into something that is worthy of that Holiday Table. I seasoned it with beefy flavors, garlic and onions and then smoked it on a pellet smoker with Hickory pellets until it was medium rare (120 internal).

Smoked Prime Rib cooked with an herb-crust on the Pellet Smoker using Hickory Pellets.

  1. Prepare pellet grill for indirect smoking at 250Β°F using hickory pellets.
  2. Trim excess fat from prime rib roast and use butcher twine to secure the shape of the roast.
  3. Mix together Killer Hogs TX Brisket Rub, Chimi Churri, Garlic and Onion in a small bowl.Β 
  4. Drizzle the outside with olive oil for a binder. Season with a layer of Swine Life Prime Beef Rub. Then generously rub the outside of the prime rib roast with the TX Brisket seasoning mixture.Β 
  5. Place the prime rib on the smoker – use an internal meat probe to monitor internal temps. When temperature in the center of the roast reaches 120Β°F, remove from smoker and allow prime rib to rest for at least 20-30 minutes before slicing.

When I was thinking about what meal I’d want for Father’s Day this year… I just wasn’t feeling ribeye… But I was feeling a perfectly smoked Beef Tenderloin, cut into filet-sized pieces, and served with some Beefy Smoked Mushrooms. Smoked Beef Tenderloin


Description

Beef Tenderloin slow smoked on the pellet grill alongside some beefy, smoked mushrooms. Perfect for a different, delicious take on steak night.


Ingredients

  • 1 whole beef tenderloin
  • 2 Tablespoons Worcestershire Sauce
  • 1 Tablespoon Killer Hogs AP seasoning
  • 2 Tablespoons Traeger Saskatchewan Seasoning (or your fave blackened rub)

Beefy Smoked Mushrooms

  • 3 pints sliced mushrooms
  • 1 shallot finely chopped
  • 5–6 cloves garlic minced
  • 1 cup red wine
  • 1 cup beef broth
  • 1 Tablespoon Kitchen Accomplice Beef Broth Concentrate
  • 1/2 stick butter
  • 2 teaspoons Killer Hogs AP Seasoning
  • Place all ingredients into a smoker-safe dish or a half size aluminum pan. Smoke on pit for 1.5 – 2 hours until mushrooms and garlic are tender.

Instructions

  1. Trim the whole beef tenderloin into center cut portion be sure to remove any sinew or silver skin.
  2. Prepare pellet grill or any other smoker for indirect smoking at 250 degrees.
  3. Drizzle the outside of the tenderloin with Worcestershire for a binder and season with a layer of AP seasoning followed by the Saskatchewan seasoning.
  4. Place the tenderloin on the smoker, insert a probe thermometer into the center of the roast and smoke until internal temperature reaches 120 degrees.
  5. Remove the tenderloin from the pit and cover loosely in foil and rest for 20-30 minutes.
  6. Slice the tenderloin into desired thickness and serve.

Porterhouse Steak smoked and topped with Bacon Tallow Butter


Ingredients


Instructions

  1. Prepare drum smoker for indirect cooking at 275Β°F using lump charcoal for fuel.
  2. Drizzle each side of the porter house steaks with olive oil to lightly coat and season with a layer of Prime Beef rub followed by the Steak Rub. Allow the steaks to rest at room temperature for 20 minutes.
  3. Place the steaks on the smoker and insert a probe thermometer into the center of one steak to monitor internal temp.
  4. Smoke the steaks until the internal temperature reaches about 118Β° flipping half way through for even cooking.
  5. Take half of the bacon tallow/drippings and mix with 1/2 stick of melted butter. Season with a dash or two of Prime Beef and Steak Rub. Rest in the refrigerate until ready to use.
  6. Remove the lid from the drum and baste each steak with the bacon drippings. Flip the steaks and continue cooking (with the lid off to sear the steaks) until the internal temperature reaches about 125-128Β°F.
  7. Remove the steaks from the grill, top each with a big dollop of the bacon tallow butter and rest for 7-10 minutes before serving.

Smoked Easter Brisket


Description

Smoked Brisket seasoned with typical β€œroast” flavors and braised with wine. Once the brisket is tender, the braising liquid is used to make a Beef Onion Gravy. A recipe perfect for serving on Easter.

Ingredients

  • 1 whole brisket 13-15lbs
  • 2 Tablespoons Killer Hogs AP Seasoning
  • 1 packet Lipton Beefy Onion Soup Mix
  • 2 cups Beef Broth
  • 2 large onions sliced
  • 6–8 cloves garlic minced
  • 3 Tablespoons tomato paste
  • 2 cups red wine
  • 3–4 bay leaves
  • 1/4 cup flour
  • 1/2 stick butter

Instructions

  1. Prepare smoker for indirect cooking at 275Β°F using Hickory wood splits for fuel and flavor.Β  (Any smoker can be used for this recipe, keep the temps steady at 275Β°F)
  2. Trim the brisket by removing thick areas of fat and sinew from the top and bottom.Β  Season with AP seasoning followed by the packet of Beefy Onion soup mix. Allow the brisket to set it at room temperature for 15-20 minutes before placing it on the smoker.Β 
  3. Smoke the brisket at 275Β°F until the outside starts to turn dark about 3 1/2 – 4 hours.Β  At this point remove the brisket from the pit and place in a large aluminum pan.
  4. Add the beef broth, wine, tomato paste, garlic, onions, and bay leaves to the pan.Β  Insert a probe thermometer into the thickest part of the flat, and cover the pan with aluminum foil.Β 
  5. Place the brisket back on the pit and continue to cook until the probe thermometer reaches 202Β°F.Β  At this point check the brisket for tenderness.Β  It should feel really soft when you insert a hand held thermometer in all areas of the brisket.Β 
  6. Remove the brisket from the pit and carefully take it out of the braising liquid.Β  Place it on a sheet pan and loosely cover with aluminum foil.
  7. Pour the pan liquid through a colander to separate the onions form the liquid. Pour the liquid into a fat separator or ladle off any fat from the top of the bowl. Β 
  8. In a deep saute pan over medium heat add the flour and butter and stir for a few minutes to create a roux.Β  Slowly whisk in the separate liquid (about 2 cups) and whisk until it starts to bubble and thicken.Β  At this point stir in the onions and taste for seasoning.Β  If it needs a little salt and pepper just use a sprinkle of AP. Β 
  9. Slice the brisket across the grain and serve with the brisket onion gravy.Β
