Fries will always dominate my comfort food world. It can be potato, sweet potato, zucchini, rutabaga, parsnips, you name itΒ  I will eat them. The one I really crave for in winter is the masala carrot fries.
Carrots have this incredible natural sweetness that caramelises beautifully when you hit them with high heat. By tossing them mix ofΒ  spices you transform this bright orange root vegetable into a highly addictive snack. This dish is naturally gluten-free, vegan-friendly, and packed with fibre and whatever carrots can offer.Β  It strikes that perfect, magical balance between sweet, smoky, savory, and tangy. I bet you cant keep your hands off them.

Ingredients for carrot fries

Carrots: The colour of the carrots chosen to make this masala fries does not matter. you can have purple, yellow or orange carrots though orange is the most popular colour available. Choose firm and thick carrots which are fairly straight. This makes it easy to cut even batons.Β Β 
Oil: though we are not deep frying the oil helps to coat and create the crispy roasted top for the carrot fries. Any neutral oil is good enough like sunflower oil, vegetable oil or avocado oil. If using coconut oil or sesame oil, it will add the fragrance to the fries.Β 
Spices and seasoning: Salt and pepper remains the key seasoning for these fries. The spices that upgrade it to masala fries is cumin powder, chaat masala and the kashmiri chilli powder. Cumin powder adds a smoky flavour, the chaat masala a zing and peppiness and the kashmiri chilli powder a mild spice level. Kashmiri chilli powder is similar to paprika with a tiny bit more spiciness. If you prefer a bit more spice you can use chilli or cayanne powder.Β 

Lets make carrot fries

Preheat your oven to 180Β°C.
Prep the carrots : wash and pat dried the carrots Peel your carrots and trim the tops. Cut 1cm-thick sticks. Try to keep them all roughly the same size so they cook at the exact same rate.
Pat your carrot sticks thoroughly dry with a paper towel after cutting add them into a large mixing bowl.
Spicing the carrots: sprinkle a mix of salt, cumin, paprika and chaat masala on the carrots sticksΒ  Drizzle with oil and give them a good toss.
Spread Out and Bake:Β  Spread the carrots out onto your prepared baking tray. Leave a bit of breathing room between each stick. If they are piled on top of each other, they will steam instead of roast. Bake for 25 to 30 minutes, giving them a good flip halfway through the cooking time to ensure they get evenly golden and crisp on all sides. Be gentle with them at this point.
Once done the carrots turn crisp and glossy.
Remove on to a serving dish and enjoy with a dip.
Can carrot fries get crispy like potatoes ?
If you’ve ever tried baking carrots before, you know they tend to go a bit soft and limp. That is because carrots are packed with water and lack the natural starch of a potato. To beat the sogginess in the oven, use these two methods as nonnegotiable
The Paper Towel Pat-Down: Getting the carrot sticks completely dry before adding oil stops them from steaming in their own juices.
The Starch Dusting: A tiny sprinkle of cornflourΒ  or rice flour acts like an invisible shield. It absorbs moisture and creates a crisp, micro-textured crust as it bakes. Ensure that you toss the spices in with the cornflour before dusting so it coats evenly.

Can carrot fries be made in the airfryer?

Oh yes, follow the steps of prepping and spicing. Then spread the carrots with enough gaps between them. These fries turn out more crispy.Β

  • 300 gram carrots
  • 2 tbsp olive oil
  • salt to taste
  • 1/4 tsp Kashmiri chilli powder
  • 1/4 tsp roasted cumin powder
  • 1/4 tsp chaat masala

to finish

  • 1 tbsp coriander leaves

Instructions

For the baked fries

  • Preheat the oven at 180 degrees for 10 minutes
  • Wash and pat dry the carrots.
  • Cut them into two to three inch long and further into fingers
  • Toss in the olive oil, salt and spices
  • Bake at 180 degrees for 10 minutes
  • Remove and flip the fingers over and re bake for another 5 minutes.

Tricolour crispy tofu wrap

If you are a tofu lover or a beginner, you will actually start liking these wraps for a couple of reasons

  • They dont feel so tofuy so its fairly easy for you to adapt into them.
  • These wraps come together in under 20 minutes and don’t need any marination.
  • They pack in a good balance of protein, carbohydrates and veggies.

If these sound good to you, lets get you started.

With the approach of autumn,Β  the sunrise is slowly getting later and later, we have started to slowly wake up late. This means it is then a mad scramble to get things done and all of us out of the door on a weekday. So having something that will roll quickly into a nutritious meal is welcomed. There are a couple of wraps that I know my kids will surely grab as they run out of the door. These are also the ones that my teens never had a reason for missing out on the eating. These are

There is another reason why these are sure to be taken without the excuse of β€œOh ! I forgot my lunchbox”. These are so much smaller when packed, so bags are less clumsy. Whatever the reason, these do get taken, eaten and are a fully balanced meal. So what is here not to love it.

Here are the details.

Ingredients to make this tricolour wrap

Before you start making wraps, you need to keep in mind that wraps are only as interesting as the flavor of the filling. So lets keep this one interesting.

Wrap:Based on the time you have you can make a roti like flat bread or use a store bought wrap. I use Helgas or Mission wraps as these are the closest to me.Β 

Tofu: You need firm tofu or extra firm tofu for this recipe. This ensure it will crisp up well and hold shape. If you have firm tofu and are planning your meal ahead, use a tofu press to ensure you get a perfect tofu. once this is sliced, salted and roasted these stay good for lunch. To make the tofu crispy, you needΒ  few ingredients cornflour, breadcrumbs and salt. These three ingrdients coat the tofu to make it crunchy.

Veggie: I have used shredded carrots and baby spinach to make this recipe as this is what I often have at hand ready to go. If you prefer, you can add shredded cabbage, colored capsicum, cherry tomato, celery or avocado. You can use a bagged salad or a coleslaw mix as well to make the wrap. This is a pretty good shredder to use for carrots and cabbage.

Sauce: This is probably the simplest sauce you would have made without any compromise on flavors. It takes only two ingredients – a good quality chilli oil and thickened cream. Once you adjust the salt levels, I will put this on anything from toast to pasta. The sauce is useful as it will not run by afternoon and not make your wrap go limp.Β

Honestly, if you have a great frying pan, you are set to make this recipe. I have this frying pan and love it to fry tofu, it does not stick much as well. I use these pre-cut parchment to wrap the rolls for lunch.

  • 4 medium wholewheat wraps

for the salad

  • 200 grams carrots shredded
  • 200 gram Spinach

for the tofu

  • 250 gram firm tofu
  • 1 tbsp Corn Flour
  • 1/2 cup breadcrumbs
  • salt to taste

for the dressing

  • 1/4 cup thickened cream
  • 1 tbsp chilli oil

Instructions

  • Remove the tofu from the packaging.
  • Wash and pat dry and slice the tofu into thick long chunks.
  • Make a slurry with cornflour and salt.
  • Set your pan on medium heat, spary a bit of oil on it.
  • Dip each tofu block in the cornflour slurry, then roll in bread crumbs.
  • Place the tofu on the medium warm pan.
  • Don't move it much till the side is crisped and the tofu piece moves easily.
  • Then flip and cook another side.
  • Once all sides are crisped, tofu is ready, remoe and set aside.
  • Warm up the wrap on a flat pan.
  • Place the spinach and top it with shredded carrot.
  • Place a couple of pieces of the crispy tofu on it.
  • Whisk together cream and chilli oil.
  • Drizzle the dressing on the tofu.
  • Fold the sides of the wrap and roll tight.
  • Wrap is ready.

Shed your dislike for Brussels sprouts and try this baked version with sweet maple syrup to take over your tastebuds. This roasted Brussels sprouts ensures that this underrated vegetable reaches your plate easily.
Once winter sets in roasted or baked vegetables are such a delightful addition to the meals. Lots of veggies, warmth from the oven and the kind of attention the kitchen gets and it feels like home. I guess this is the whole reason why these are the top-rated recipes for the holiday season and thanksgiving. Being on the opposite hemisphere, ( Australia), Brussels sprouts become more of a Christmas in July recipe than for Thanksgiving.

Brussels sprouts| what are they?

The edible buds of the Gemmifera cultivar belonging to the cabbage family are Brussels sprouts. The slightly green tight leafy buds, about the size of pingpong balls areΒ  obviously,Β  the name gives away where it was popularly grown.The look like mini cabbages when sliced and peel like the cabbage leaves in miniature sizes. It comes on a long stalk, but at the supermarket, you may just get the buds. ( source)
Towards late autumn, these buds are harvested in larger numbers and hence was introduced as a thanksgiving essential.They are served often as salads, pan roasted with balsamic, baked or boiled. We have added them to a baked pasta recipe with a creamy sauce
Being a part of the cabbage family, they are rich in sulphur compounds and therefore, carry a bad reputation for being bitter and unpleasant. Predominantly,Β  this comes from over boiling them or over cooking them, which releases the sulphurous compounds and the resultant unpleasant taste.Β 

How to prep some Brussels sprouts?

  • The loose outer leaves and excess stem are clipped away and these easily burn while roasted leaving an unpleasant taste.
  • Soak the sprouts in water for about 5 minutes, wash them and set them to drain.
  • Pat dry and the sprouts are ready for use.

How do these roasted Brussels sprout taste?

Brussels sprouts tend to become soft in the centre when roasted, yet the outer leaves are crisp. This combines with the sweetness from the maple and a few spicy hints from paprika take off any bitterness that you may expect from this vegetable. The end result is slightly smokey, slightly sweet complexity of flavour. If you are still on the fence, try it and don’t be scared of this lovely vegetable.Β

Brussels sprouts: Once the sprouts have been cleaned and prepped, it is just slicing them in half.if you havent read above, the cleaning tips are outlined.
Oil: Good quality neutral oi. I use olive oil or rice bran oil. However this need not be very specific. You can choose vegetable oil, coconut oil or any other that you are used to.Β 
Sea salt: I like flaky sea salt for this recipe as it has a depth of mineral content than table salt.
Maple syrup: The maple syrup fragrance while baking will remove any unpleasant odours while the sprouts cook. It will also take away the slight bitterness that these sprouts may have.
Spices: to spice it all up the faint hint of paprika that last hits the mouth make all the difference in flavour.

For roasting

  • 250 g Brussels sprouts
  • 1 tbsp coconut oil
  • Sea salt

For flavour

  • 1 tbsp maple syrup
  • 1/2 tsp paprika
  • 1 tsp Lemon juice

Instructions

  • Preheat the oven at 180 for 10 minutes
  • Cut off the knobby ends of the Brussels sprouts and remove any discoloured leaves.

  • Wash pat dry and slice them in half.
  • Add the sliced sprouts into a mixing bowl and add oil and salt and gently rub till the sporuts are evenly coated.
  • Arrange this on the baking tray.
  • Mix together the maple syrup, lemon juice and paprika.
  • Remove the half roasted Brussels sprouts from the oven.
  • Brush the maple mix on the sprouts and place them back to bake.
  • Bake till the centre becomes a bit soft at 180 degrees for about 10 minutes.
  • Remove the baking tray and scoop into a serving dish.
  • Enjoy the sprouts warm.

Nuts – walnuts or pecans chopped or broken bits of nuts after roasting the Brussels sprouts add so much crunch and nutrition. The subtle sweetness of maple works with the nuts really well.
Sweet potato – The soft roasted sweet potato is by far the best add on roots vegetable to this roast. I love the colours of the two together as it just screams autumn for me.

Furthermore, you can add carrots, parsnips, cauliflower too to make this a huge bowl of roast. If you pass the bowl to me, I will still pick out all the brussels sprouts before I choose the others.

Familiarize yourself with the Cabbage varieties

The big head of cabbage does actually comes in a few different types, providing a bit of textural and pigment variation.

The common white cabbage: this is the most versatile of all cabbages. They are perfect for all sorts of recipes, mellow and crispy and sit well in salads too. Put these on the grill or tandoor to chargrill.

The red (or purple) cabbage: these are very similar to the white cabbage. It is the colour that attracts the eye. The red cabbage is usually seen in salads and as pickles. However they are equally good when stirfried or braised too.

Savoy (crinkled) cabbage: what is interesting about this variety is the crinkly texture of the leaves. These are great to filled and rolled to make skinny enchiladas!

Wombok: This slightly sweet Chinese cabbage or Wombok is perfect for Asian dressings and stirfries. They are super tasty as kimchi and pickled cabbages. For Indian recipes, I love using wombok for poriyal and kootus as it curls up well, providing a good textural feel.

Bokchoy:Though not typically considered a part of cabbage bokchoy falls under the cabbage family.Most Asian recipes do call for he green leafy bokchoy. They are more green and tender. The flavour is brilliant in Asian style soups and stirfry.

The love-hate relationship with cabbage

You certainly would have come across a bit of a love-hate relationship with cabbage.Some people love it and some are averse.Β Knowing the science behind it will ensure you know the reason for your dislike.

Cabbages are a part of the cruciferous vegetable family. They are naturally rich in sulfur compounds like glucosinolates.
When cabbages are cut or cooked they release these compounds as volatile sulfur gases. This is the weird fishy smell you may encounter. This may be the reason some people dislike the cabbage.Β

Reasons to love the cabbage

Though there is dislike for cabbages among some, there are several more wonderful (and delicious) reasons to love it!

  • Cabbages are low calorie vegetable. It is also nutrient dense. That makes it perfect to add volume to your meals.
  • It carries high levels of fibre that ensure fullness and avoids constipation.
  • Cabbages are good source of vitamins C and K . Both fresh and cooked cabbage are rich in them!
  • Cabbages are diabetic-friendly as they are leafy vegetable, meaning they are low in sugar content.
  • It has a good amount of folate as well.
  • As for taste, they have a mild sweetness and are crisp to bite when fresh. When sauteed or grilled , they retain the sweetness.

Tips to cook the cabbage right

The sulfur smell that comes from cabbages can be reduced by following these.

  • Use lemon juice: when you add lemon or vinegar to the shredded cabbage it greatly reduces the smell that develops. You can also add an acidic agent to the cooking water instead.
  • Using an open pan: To saute or stirfry use an open pan and dong cover, and cook. This ensure the volatile compounds can escape.
  • Quick cooking: Instead of slow boiling, always resort to quick boiling methods when using in soups. Slow cooking any of the cruciferous vegetables releases the sulfur compound, causing the smell.

Alu kangmet | Manipuri potato mash

While trying to explore the diversity of cuisines across India, one root vegetable that gets so well used is the potato. May it be jeera aloo, urulakizhanagu stew, potato podimas or aloo dum biryani, you will find potato running its own show here. This pattern extends to all the Indian cuisine styles and the one that caught my attention recently was the Manipuri spicy alu kangmet.

What is alu kangmet?

Though the name sounds so complicated this is one of the simplest of the Manipuri cuisine. Basically it a spicy, mashed potato recipe. The ingredients that flavour are mustard oil, chillies, garlic scapes and ngari (fermented fish). in this vegetarian version, we have omitted the fermented fish. The raw onions served with it or mixed in as pieces with the mash flavour it different from classic mashed potatoes.Β 

Dietary profile for alu kangmet

Traditional alu kangmet has fermented fish paste added to it so it will not really be a vegan vegetarian recipe. However, the recipe we have made today is with most of the flavours without the fish paste making it vegan.
The recipe uses a bit of oil, but not enough to deep fry so I would say they are still low-oil recipes. However, don’t skip using mustard oil for the best flavour.
The aloo kangmet is certainly grain-free, nut-free and nightshade-free.

Ingredients and substitutions

Potatoes: The potatoes are the main ingredient for this recipe. Any variety of potato that cooks soft and mashes well like the Yukon gold or white potato is perfect for this recipe. You can use the same variety that we have used to make jeera aloo.

Garlic greens: The traditional recipe for alu kangmet uses green onions rather than regular onions. I had a small batch of green onions and that is what I have used for this recipe. If you don’t have any red Spanish onion or sweet pink onion can be substituted,Β 

Dry red chillies: Ooo this is a spicy recipe that packs in a punch. The dry red chillies roasted in oil are the ones that are mashed in with the potatoes. Use the spicier serrano dried or the milder bydigai (Kashmiri chilli)

Mustard oil: The mustard oil is absolutely needed to bring that classic Manipuri flavour to this dish. You will find these in the Indian grocery stores. Most of them say external application only, but read through and you will notice that it will be used for cooking in certain cuisines. The restriction is because of the high euric acids. There are tolerable limits established in certain countries that are deemed safe. The quantity used for this recipe is really small and under regulatory limits. If this is not an option for you, try olive oil or vegetable oil. I will not recommend coconut oil or sesame oil as it imparts a distinct South Indian flavour and takes away from the recipe.Β Β 

Salt: Can’t make this spicy mash without salt! Regular sea salt or Himalayan pink salt will make just the same.Β

Let’s make alu kangmet

There are only a few steps that lead you to this spicy lip-smacking potato mash.

Prepping the potatoes: Boil and cool the potatoes. Peel them, gently mash them with a fork and set them aside.Β 

Making the spicy mix: Wash and clean the green garlic leaves. Remove all the dry leaves and chop them half half-inch pieces. Into a frying pan add oil and as it warms up add the mustard oil. Saute the green garlic
(garlic scapes) and then the dry red chillies till they are crisp.Β

Bringing it all together: Add all this to the potato and mash the spices into the potatoes with salt. roll them up into small balls to serve with rice.Β  In the recipe card below are the details of this recipe and you can pin from here too to your board.

Serving aloo kangmet

Aloo kangmet is often served with tan (bread) at breakfast time. However, the small ball of aloo kangmet is so soothing to have with rice. If on a soft diet have this with porridge or congee.

Meal prep alu kangmet

Aloo kangmet stays so good for 2 to 3 days in the refrigerator to have for the week, However, potatoes leach water and lose that soft texture you don’t want it frozen.Hence, I haven’t quite come to be successful in freezing this recipe.

Ingredients

  • 3 medium potatoes boiled and peeled
  • 5 tsp mustard oil
  • 2-3 heads garlic scapes cleaned and chopped
  • 5 dry red chillies stalk removed
  • salt to taste

To serve along

  • 1/2 medium onion sliced

Instructions

  • Boil and peel the potatoes.
  • Mash them a bit by a fork and set aside.
  • Into the frying pan add the mustard oil.
  • On medium heat roast the cleaned and chopped garlic scapes.
  • Add the red chillies and roast them on low heat till crisp.
  • Add the spicy mix to the potatoes.
  • Sprinkle salt and mash further, till they come together as a ball.
  • Taste test and adjust salt if needed.
  • The alu kangmet is ready to be served.

Why would you skip a platterful of colourful vegetables, that are a perfect side, salad or morning hash? Enjoy the starchy bites of roasted goodness.
It is a small respite from the numerous Indian festivals and the chill in the air is still hanging around. Therefore a perfect time to get that platter or baked root vegetables out. I like baked root vegetables a bit more than pan roasted ones for the following reasons
  • They are one pot so much less effort.
  • The starchier sweetness improves your baking adding a ton more cozy feeling.
  • When I bake my kitchen is warm at the same time.
  • It is a recipe that you can do as a big batch with minimal prep and have all week long in the fridge.
  • It pairs well with pasta, rice or any grains,can be rolled as wraps or made into a salad.

Ingredients for baked root vegetables.

The vegetables: the baked vegetable tray is one recipe that allows you so much flexibility in terms of what you can have. You can make it as colourful as you like or as monochrome as you prefer. Here is a list of vegetables I like to throw into the tray.

  • Sweet potatoes
  • Carrot
  • Turnip
  • Potato
  • Radish
  • Swedes
  • Beetroot

For roasting: Olive oil, salt and herbs are the ones that work. The herbs I have chosen is rosemary and oregano. You can use thyme or basil as well.Β 

Lets make baked root vegetables

The baked vegetables is the best use of a roasting tray.

Prep the vegetables: choose starchy tough vegetables to start with. Wash thoroughly. Cut them into big chunks or dices as you prefer. Keep the beets separately. The carrots, potato sweet potato, radish, parsnip, swedes, turnip can all go together.

Coat them in flavours. Since the vegetables are going to be soft and bland, it is best to coat them with flavours. Sprinkle salt, pepper abd drizzle oil and toss them well. For flavours I prefer to add fresh study herbs that just dont burn away. Rosemary, oregano and thyme are my first choice. Go with what feels natural to you. You can replace the pepper with chilli flakes if you like the heat. Lets the vegetable mix sit while you preheat the oven
Ensure that the beets are coated and kept separate.

Bake: preheat the oven at 180 degrees for 10 minutes. Place the vegetables on a roasting tray. Spread them out evenly. Poke in pieces of beets into the gaps so they cook along. Roast the vegetables for 35 to 40 minutes at 180 degrees Celsius on heat both from up and down. Half way through the time, flip the vegetables over to ensure even roasting. After about 35 minutes the vegetables will be ready and fork tender. Remove from heat and direct to the table. Or cool and proceed for storage.

The baked root vegetables are wonderful to add bulk to any meal or in the lunch box.

Is this a vegan recipe?

Baked root vegetable is an excellent vegan platter. It is filling, a mix of good healthy fibre and carbs and perfect for any vegan meal.

How to make baked root vegetables into a salad?

Once you have the baked veggies in meal prep you can have a hearty salad with it. For the dressing I prepare a generous mix of lemon and lime juice with some pepper and salt. Then you need some freshness. Chop up some tomatoes, a cucumber and handful of oregano, mint and parsley. Add all this into the mixing bowl with double the quantity of baked vegetables. Pour the dressing over it. Toss well and serve immediately. They are great sides to meals and double up as salads. You can add a bunch to your breakfasts to as hash.

How do you ensure the beets don’t leech the colour all over?

There are a couple of ways you can achieve this. If you peel chop and place the beets separately, then place them on the tray to bake it will have zero leaching.
Another method is to ensure you add the beets right at the end, a quick toss in the oil and salt and straight into the oven.

  • 3 medium sized carrots
  • 1 large sweet potato
  • 1 turnip
  • 1 swedes
  • 1 large beetroot
  • 1 medium sized potatoes
  • 2 tbsp olive oil
  • salt to taste
  • 1 sprig rosemary
  • 5-7 leaves oregano

Instructions

  • Wash, peel and cut the vegetables into big chunks.
  • Add them to the baking tray.
  • Tuck in rosemary and oregano.
  • Spinkle salt and drizzle oilve oil and massage it in.
  • Preheat the oven at 180 degrees for 10 minutes.
  • Place the tray in the oven to bake.
  • Bake for 30 minutes.
  • About 15 minutes in turn the vegetables for even baking.
  • After 30 minutes, check if the vegetables are fork tender.
  • The vegetables are then ready to be served.

Sadhya olan | gourds and cowpea stew

The banana leaf sadhya made for Onam, Vishu or any of the Kerala festivals has an array of side dishes that are served on the top half of the leaf. Some of these we have posted earlier

However, the mildest, creamy yet simple olan is missed if it is not on the leaf. Have you made it?

What is olan?

Olan is a slow cooked stew made with gourds cooked in coconut milk. It is a mild creamy curry that predominantly uses ashgourd and pumpkins. Depending on regional variations you will find yard long green beans (payar) or cooked cowpeas added to it. It is flavoured gently with salt,curry leaves and slit greenΒ  chillies. Unlike a lot of Kerala dishes it doesn’t have a mustard tempering, rather a good tablespoon of pure coconut oil stirred in as soon as it is removed from the heat for that roundeness and fragrance you experience.

How is sadhya olan different from regular olan?

If you are familiar with Kerala recipes, you will know that olan is one that is probably the least made in most houses. This is because the regular olan is a runny curry with less complex flavours. HoweverΒ  the sadhya olan with the creaminess from the coconut milk and the cooked cowpeas is a thicker version which never runs. Though mild it has a well flavoured along with the semi mashed vegetables. The key to making the sadhya style olan is managing the liquid content.

Ingredients to make olan

Vegetables: since this is a mild stew with gourds and pumpkins, so they make the bulk of this recipe. the withte fleshed wintermelon ( elavan) is preferred over the giant ash gourds. The pumpkin adds a it of colour and sweetness. if you cant get the wintermelon, bottle gourd, watermelon peel or chayote work well too.
Bean: the creamy composition works because of the earthy flavours from the cooked cowpeas. Cowpeas have an earthy flavour and are perfect for this mild recipe.
Coconut milk: coconut milk is the cooking liquid here. At first the this cococnut milk is used to cook the gourds in. At the final stages, string the thick coconut milk or coconut cream. this ensures that the final result is thick olan and it is creamy.
Seasoning: Salt is the only seasoning here.
Spices: this is a mild stew and uses no spices. The single green chilli added is for fragrance, not heat. This is opional.
Oil: the final roundedness of the recipe comes from half tsp of coconut oil stirred in at the end. This is an optional step, but brings the flavour exactly like the one in the sadhya.

The gourd stew or olan is a great recipe to mealplan. It stays good for a few days under refrigeration. They do freeze good, but not great. The gourds do go a bit limp upon thawing the frozen one. So add it to your mealprep not much to your freezer list.

What pairs well with sadhya olan?

Sadhya olan is a great accompaniment to the banana leaf meal or a South Indian thali. It pairs well with idiyappam (string hoppers), steamed breads or chappathi. In a great rush week, Olan is perfect with some toasts or just as such warmed in a bowl resembling a chunky soup.

for cooking cowpeas

  • 3 tbsp cowpeas
  • 2 cups drinking water

for cooking the curry

  • 250 gram wintermelon Ash gourd
  • 100 gram pumpkin
  • salt to taste
  • 1 medium green chilli
  • 5 curry leaves
  • 1/2 cup coconut milk thinned out, see notes above.

To finish the olan

  • 1 tsp coconut oil
  • 2 tbsp coconut cream

Instructions

To cook the cowpeas

  • Wash and soak the cowpeas for 6 hours or overnight.
  • Drain and add fresh water.
  • Pressure cook the cowpeas for 10 minutes in high pressure. Release the pressure naturally.
  • Drain the cooked cowpeas and save the cooking liquid.

to make the olan

  • Wash and peel the ashgourd ( winter melon) and pumpkin.
  • Slice into 1inch slices.
  • Add to the khadai, with a slit green chilli, salt and curry leaves.
  • Mix the coconut milk with a bit of water to thin it out. Don't add a lot of water as the winter melon and pumpkin will leech a lot of water when cooking.
  • Add this to the khadai. mix well.
  • Set his to cook on a low heat. cover and cook for 10 minutes.
  • Open the lid, mix well and add the drained cow peas.
  • Slow cook it till the liquid is absorbed well, You can mash the cowpeas a bit as they cook
  • Stir in the coconut cream and coconut oil.
  • Remove off the heat. Cover and keep for 10 minutes
  • The olan is ready to be served.

Bharwan baingan | Peanut stuffed eggplant

Stuffed eggplants

The moment you place a plate of stuffed vegetables feel so much more special that just stir frying.
This is the magic of bharwan. It is not vegetable specific and can be seen in most dominant cuisine styles.
In Indian recipes as well you will come across a large number of vegetables served as roasted or curries with stuffed produce. Okra, capsicum, bottlegourd, eggplants, chillies, bittermelon, lemons,Β  mushrooms, you name it, there will be a lipsmacking stuffed version of it.
Thats when we got these baby brinjals!!Β That too farmfresh baby brinjal (eggplant) spotted in the market deserves a wholesome approach. Here is my version of the tastiest stuffed baby eggplant.

What is a brinjal?

Brinjal, eggplants and aubergine are all the same.

The fruits of Solanum melongena is a sturdy shrub that grows easily. The fruits come in various shapes and colours. Some are deep purple and large and used for roasting. Some green or varigated, some elongated like a zucchini and some round like a little ball. The flavor profile is nearly the same. All can be roasted, boiled or grilled and rarely eaten raw.

Ingredients to make this peanut masala stuffed brinjals

Unlike the popular dry masala stuffed baingan recipe, this is one that uses fresh ground pastes and roasted peanuts. This makes the eggplants succulent ans keepsΒ theΒ moisture as it roasts.

Brinjal: since eggplants come in various sizes for this recipe what you need is small baby oval or rounded eggplants. The colour or variety is up to you it can be purple, variegated or the white variety. While coosing the eggplants for this recipe, ensure that they are all even sized so you can get them cooked evenly.

Peanut: roasted peanuts form the bulk of the filling.this not only gives the nutty creaminess but also makes this recipe much more nutritious. You can use peeled peanuts of keep in the skin on. Peanut butter is not suitable becoz of the oil content.Β 

Onion: the red onion provides the base masala flavour.Usually I prefer this and a smooth paste so it is easier to stuff the eggplant. You can choose shallots or white onions to make the same. Shallots will be a bit sweeter.

Fresh masala base: the true flavour of the recipe comes from the fresh pastes that are made. This is a combination of fresh ginger root, garlic and green chillies. When made a paste together, they create fresh and robust flavour paste. This combined with the peanuts make the stuffing so tasty.

Lemon juice: the final splash of Lemon juice once the recipe is done provides a summery freshness to the recipe. You can have lime, lemon or tart orange juice to make this shine.

The recipe is a bit of work between prepping the brinjals and making the masala paste. However, once that part is completed, it is fairly a easy process. Check the notes below so you can actually make it in larger quantities for meal prep.Β

Peanut masala stuffed eggplants

Ingredients

  • 20 small eggplant

for the onion paste

  • 2 medium red onion

for the fresh masala paste

  • 1 inch fresh ginger root
  • 3 medium green chilli serrano
  • 5-6 cloves garlic peeled
  • salt to taste you can adjust later after mixing the peanuts.

for the peanut base

  • 1 cup peanuts roasted and crushed

For roasting

  • 4-6 tbsp cooking oil use as necessary.

Instructions

  • Crush the roasted peanuts to a coarse blend and set it aside.
  • Make a fresh paste of green chillies, garlic and ginger and set this aside.
  • Mince or coarse grind the onions and set this aside.
  • Wash and remove the stalk of the baby eggplants.
  • Slit them lengthwise in two perpendicular strokes, still keeping them intact at the base.
  • Mix together the peanuts, the fresh masala paste and the onion paste to make the stuffing.
  • Check and adjust the salt. Add a pinch higher as this flavours the eggplants too.
  • Stuff this mix into the eggplants.
  • Heat the frying pan on medium and brush oil on the pan.
  • Place the stuffed eggplants in the pan as it heats up.
  • Turn and roast till all sides are seared.
  • Lower the heat and cover the pan to allow the eggplants to cook.
  • After 5- minutes open the pan and spray some oil on the eggplants.
  • Slow roast the eggplants, constantly turning them.
  • once the eggplants are ready the are a bit squishy, still hold shape.
  • Transfer to a serving platter and enjoy.

Mealprep the stuffed brinjal

Stuffed brinjal stays good in the refrigertor for up to a week, so we highly recommend this recipe to add to your meal prep. Though it takes a bit of time, if you have a large quantity of eggplants, do not hesitate to make a big batch and freeze for later. Complete the roasting process and cool before freezing. In this way, eggplants wont leach and the result when you thaw it back up is as good as the fresh ones. Freeze as a single layer first and then store them in a container. This ensures they do not stick to each other.Β

The winter blustery nights should be renamed as stay at home curry nights.

I am talking about the curries that feel like home, not the greasy,masala heavy ones. The aloo curry, lauki ki sabji or the tofu curry, these are the ones that i seeing this group. There is one more that I love to make on the coldest nights,Andhra style dappalam. There is no particular explanationΒ  why dappalm on winter nights other than comfort. If you havent tried this Indian curry, today is your day.

What is Dappalam?

Dappalam or mukkala pulusu is a tangy, stew made with pumpkin, sweet potato, moringa pods, eggplants, yams and ashgourds to be served with rice. This light and low calorie curry is from the andhra cuisine. It is a lentil free, gluten free and nut free stew.

Is dappalam same as sambhar?

Dappalam is very different from sambhar both in flavour and ingredients. Though the vegetables used and the tamarind feels the same,dappalam does not use any cooked dals to thicken it. It is thickened using rice flour.Β  Dappalam also doesn’t use any spice mix unlike sambhar which needs sambhar podi or the ground paste.

Ingredients to make dappalam

Vegetables: most vegetables that feature in Southindian curries can be used in this curry as well. Pumpkin, wintermelon, bottle gourd, ridge gourd, small eggplants, tomato, moringa pods all work well in this recipe. You can add spinach, moringa leaves, methi leaves can also be great additionally. The spiciness is added in two fold using green chillies and later on as chilli powder. Serrano peppers provide a good flavour here.

Tamarind: the tanginess is what keeps the curry interesting. Dry tamarind soaked and pulp extracted is the commonly added one. You can use storebought tamarind paste. If adding the paste ensure you stir in a little at a time as it is stronger in intensity than fresh pulp.

Spices: not much of whole spices or.spice mixes are made for this recipe.Β  What goes in is salt turmeric powder amd red chilli powder. Choose your red chilli powder based on the heat you prefer. It can be mild Kashmmiri chilli or sick thikat lal. You can also.vhoose between paprika or cayenne.

Jaggery: the balance of the heat from the chillies is well balanced by a bit of jaggery that is added.
Infact the jaggery also enhances the sourness from the tamarind.

Rice flour: rice flour thickens the gravy to a pouring consistency. This can be white or red rice flour..ensure it is a fine ground powder. Glutinous rice flour is not useful to make this as it will make the gravy a bit jelly like (not pleasant to have).

Mukkala pulusu

Lets make this mukkala pulusu

The mukkala pulusu is a easy curry eveΒ  for beginners to master as you canΒ  keep adjusting the spices as the curry boils.

  • Wash peel and cut the vegetables chosen into chunks.
  • Soak the tamarind in warm water and set it aside to extract the pulp.
  • After 10 minutes , crush with hand and extract the tamarind pulp.
  • Add the vegetables into a cooking pot with turmeric and salt.
  • Add the tamarind pulp and mix well.
  • Add just enough water to submerge the vegetables.and cook them on medium heat.
  • Add red chilli powder and jaggery as the vegetables start to become soft.
  • Cover and cook this till the vegetables are soft.
  • MakeΒ  a slurry of the rice flour.
  • Pour this into the curry while constantly stirring.
  • Let this slow boil and thicken the curry
  • When it is a pouring consistency and the curry appears glossy, it is ready.
  • Remove from heat and serve.Β 

What pairs well with dappalam?

Dappalam with steaming hot cooked rice (white or red), lettuce veppudu and some sago vadam is our Sunday meal. Don’t forget the dollop of ghee on the hot rice to get the authentic flavour.Β  You can pair this with soft rotis, fluffy set dosa, string hoppers or idlies too.

Is dappalam a vegan recipe?

Yes Dappalam is a wonderful vegan stew recipe. It is loaded with vegetables andΒ  is free from dairyΒ  nuts and gluten.

When is Dappalam made in Andhra cuisine?

Dappalam is often made during the Sankranthi festival as a part of the elaborate meal. You can swap the sambhar out of a banana leaf meal to add this or in the south Indian thali.Β

Ingredients

for the tamarind pulp

  • 1 lime sized ball tamarind
  • 1 cup drinking water

for the curry

  • 2 cups mixed vegetable pumpkin, wintermelon, moringa pods
  • 2 medium green chilli
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • salt to taste
  • 3 tbsp jaggery crushed
  • 10 curry leaves
  • 2 cup drinking water
  • 1 tbsp Raw rice flour

for the tempering

  • 1 tbsp Sesame oil
  • 1 tsp mustard seeds
  • 5 curry leaves
  • 1 pinch Asafoetida

Instructions

  • Soak the tamarind in water for 15 to 20 minutes.
  • Squeeze and extract the pulp.
  • Chop the vegetables into big pieces
  • Add to the deep pot with turmeric, salt and the tamarind extract.
  • Add water and cook the vegetables..
  • Once they are fork tender add the rice flour slurry.
  • Mix well and let the curry cook further to thicken.
  • Once the curry looks glossy, it is ready to be served.

The cumin flavoured, gluten free, delicate basmati rice preparation is one of the basic recipes from Indian kitchen. This jeera rice pairs well with most curries, and is quick and easy to prepare.Β 
The Indian pressure cooker that wakes up most of us is the biggest secret to fastest Indian cooking. May it be rice, beans, dals, curries or snacks,Β  we can proudly say we mastered the art of the pressure cooker.Β 
Cooking rice in the pressure cooker is one of the first tasks we learn in the kitchen. Among these jeera rice comes out perfectly each time. This is the beginning of confidence in the Indian kitchen. Hope you like this basic recipe.Β 

Ingredients for jeera rice

Basmathi rice: Long grain basmathi rice is the key to many north Indian staple recipes. For making jeera rice, aged basmathi is preffered as it keeps shape really well. The aging process strengthens the rice reducing the water content in it and strengthens the starch. I prefer to use the basmathi that is aged two years or more. From Amazon I get this Dawat basmathi delivered in Australia.Β 
Oils and fats: ghee is the fat that makes this recipe so fragrant. You can any brand you choose. You can also use an oil of choice to make this recipe, not much changes need. I have made this recipe with plant based butter too and they come out well.Β 
Spices and Seasoning: the main spice used to flavour the recipe is cumin seeds (jeera). This is the small seeds and should not be confused with caraway seeds (shahi jeera) or fennel seeds (saunf). Also, cumin powder is not a substitute.Β 
Other than this you will need a cinnamon stick a bayleaf, 4 to 5 green cardamom and a star anise to make tjis recipe. These are not the overpowering spices but the whole spices that add a lot of fragarnce to the recipe in the background.Β 
Salt: is another major ingredient you need for the seasoning. Not so specific, anytype of cooking salt will do.Β 
At times, I do pop in a whole Serrano chilli on top of the rice, this add a chilli fragrance without any heat to the recipe.Β 

Let’s make jeera rice

Jeera rice is that recipe many of us make effortlessly and over a period of time acquire the small tips that make it better. Though a basic recipe it is important to follow some steps to get the perfect non-sticky fluffy rice.Β 
  • Washing the rice and soaking: measure the rice and add to the bowl. it is so important to wash the rice multiple times till the water runs clear. Don’t pop it into a sieve and run it under water, it doesn’t help. Rather, rub the rice grain and drain the water each time. It takes about 3 to 4 washes to get the rice run clear. Drain well and set aside.
  • Now to soaking, measure the water 1:5 times of the rice. Add to the drained rice and let it sit for 15 minutes. After 15 minutes ( can go up to 30 minutes), drain the rice and save the soaking water. The cooking water is the cooking medium later as you have already measured it out.Β 
  • Saute the spices add ghee to the instantpot. Saute them on low heat till they are aromatic and slightly change in colour. The ghee is now flavored with the volatile oils of the spices.Β 
  • Frying the rice: Frying the rice onΒ  low heat for a a few minutes coats the rice grains with the aromatic ghee. This process also ensures that the rice does not stick to each other when cooking. I prefer to add the salt at this stage so it is evenly distributed.Β 
  • Cooking the rice: Pour the soaking water that we drained and set aside, back into the rice. This water is enough for the cooking process. Place the lid and pressure cook for 1 whistle ( the Indian pressure cooker measure). Remove from heat. Let the pressure hold and naturally release. This takes about 15 minutes off the heat.Β 
  • Fluff and garnish: When the pressure is naturally released, use a fork and fluff the rice gently. Be careful as the steam is still hot.Β  Once this is done, the jeera pulao is ready to be served.

Can I make this recipe in the instant pot or rice cooker?Β 

The jeera rice recipe works perfectly for the instant pot too. You can saute the whole spices initially and then cook on rice mode to get the perfect fluffiness. The key point is to ensure that you have an exact rice to water ratio of 1:1.5Β 
For the rice cooker sauce the spices first and then add the rice and water. You will get a very similar result to the pressure cooker, about the same time too. The rice to water ratio for the rice cooker is 1: 2
I am loving the new instant pot Rio as it has the wider base that makes sauteing so much more easier and gives me perfectly cooked rice grains each time.

Should I soak the rice?Β 

It is good to soak your basmathi rice for 15 minutes before cooking to ensure you are getting fluffy rice. However, this is not essential for the jeera rice to be perfect. It is really important to know that the water that you measured and took is the same that you are using for soaking.Β 

Key points to remember.

  • Do not use excess water to soak the rice. The water as per the ratio is plenty.
  • Do not drain the soaking water and add fresh water afterwards to cook, this changes the ratio of water for cooking the rice to fluffy separate grains.Β

Can we make this recipe vegan?

The classic jeera rice is made with ghee. This takes away from being vegan. If you swap the ghee for oil (olive oil, ricebran or any you like) you will make this recipe vegan. The rest of the whole spices and basmathi rice used is vegan friendly.Β 

What pairs well with jeera rice?

Most Indian curries pair well with jeera rice.Β 
These are my top favourites to pair with this fluffy rice.Β 
If you are doing a wrap you can certainly add this rice for volume and flavour. We make a lunch wrap with the basic paneer khati roll idea and added jeera rice yo make it a fuller meal.Β 

Mealprep and storage

Jeera rice is one of the recipes I love in mealprep. The rice doesn’t dry easily and it stays good and fluffy in the refrigerator for up to a week. Packed in freezer safe boxes, it stays well for upto 3 months. To reheat, defrost and heat up in a microwave.Β 
Usually I pack jeera rice and dal half and half in the boxes. This when reheated is pretty much like my grab and go box.Β

  • 1 cup Basmathi rice
  • 1.5 cups drinking water

For tempering the ghee

  • 3 tbsp ghee or oil
  • 2 tsp cumin seeds
  • 1 star anise
  • 1 large bay leaf
  • 2 green cardamom

Seasoning

  • salt to taste

Instructions

  • Wash the basmathi rice till the water runs clear.
  • Soak the rice using the measured 1.5 cups of water for 15 minutes.
  • After 15 minutes, drain and save the soaking liquid.
  • On a low heat place the pressure cooker to warm.
  • Add the ghee, add all the spices and cumin seeds.
  • Saute till he spices are aromatic.
  • Add the drained rice, salt and saute for two minutes till the rice is coated with the spices.
  • Add the water that was drained and kept.
  • Mix well and pressure cook for one whistle.
  • Once the pressure release naturally, fluff the rice.
  • The Jeera pulao is ready to be served.

Talking about quick ideas that makes rice taste a bit more than plain, cooked version is another trick up my sleeve.
This is faster and quicker than the kalonji rice or the ghee podi rice , i have written about before. AddingΒ  yogurt cured chillies mustard and curry leaves s etc tempering into the cooked rice (or left over rice) revives it and it feels like you have made a pulao or variety rice.

Ingredients to make quick thallippu saadam

Cooked rice:cooked rice is the base of this recipe. You can use sona masoori, basmathi or thanjavoor ponni rice to make the steamed rice. Sticky rice is not suitable for making this recipe.

Tempering ingredients: ghee or oil is the base of the recipe. You can use coconut oil, olive oil or sesame oil as per your preference. Whole mustard seeds, cumin,Β  black gram dal , curry leaves and mormilagai (yogurt cured chillies). Mormilagai is the key flavour factor in this recipe. Yes, you can use red chillies instead, however it doesn’t give the same flavour. You can add crushed garlic or shallots can be added to the oil as you tempering.

Seasoning : if using mor milagai, it has added salt so be watchful when you add salt to the dish. No other seasoning is really needed for this recipe.

Lets make thalippu saadam

  • Cook and fluff the rice.
  • Prepare the tempering for the rice.
  • Add the tadka to the rice, sprinkle salt.
  • Mix well and the rice is ready to serve.

Can I use left over rice to make this recipe?

Leftover rice is perfect for this recipe as the cooked rice grains are well separated. This makes it even better in making any variety rice or fried rice. So to make thalippu saadam left over rice is perfect.

Can I make vegan ogranne rice?

Instead of ghee if coconut oil is used to make the tempering the recipe is then vegan.

Meal prep and storage

The ogranne rice stays good for a week in the fridge. Additionally, the recipe freezes well and is an easy one to add to the meal prep. To thaw, ensure you defrost and then bring it to heat. Steaming is a great option too.

What pairs well with thalippu saadam?

Thalippu sadam is the one recipe you can pair with a lot of curries like vindaloo, thalagam kuzhambu or thengaarachukuzhambu and stirfries like cabbage thoran, beans foogath or bhindi kalimirch .You can use the same in a wrap along with roasted veggies and chickpeas or a party.

  • When the mustard seeds start crackling, add the cumin, urad dal, mor milagai and curry leaves.
  • When this roast and temper, add the mix to the prepared rice.
  • Sprinkle salt and mix well.
  • Crush a couple of mor milagai as you mix the rice for extra flavour.
  • Once mixed well, the recipe is ready to be served.

What I see as a difference between home cooks and chefs is not just in the size of meals that we make. Chefs have to keep up with so many of our taste factors, cost control and visual appeal. Home cooks, do know the people they cook for, so fairly easier for them to play around with the ingredients to suit the home needs. Here is an age old recipe that a lot of South Indian home cooks rely on, peerkangai thol thogayal.

What is peerkangai thol thogayal?

Peerkangai thol is the peel of ridgegrord. This along with roasted lentils, spices, coconut and tamarind is ground into a coarse paste. This is peerkangai thogayal or ridgegourd chutney. It is a popular recipe among all South Indian states and has a few different names, peechinga chutney in Kerala, beerakaya pachadi in Telugu,Β  heerakai chutney in Kannada.Β  Often paired with steamed rice, a dollop of ghee and some stirfried vegetables on the side, the recipe is a classic homestyle one.
The recipe as such is

  • Vegan
  • Gluten free
  • Onion and garlic free
  • No nightshade added
  • And dairy free

Ingredients from ridge gourd chutney

Β Angled loofah or ridge gourd belongs to the cucumber family. The tough outer skin has predominant ridges. The gourd as such has soft flesh that is cooked into curries or stirfries. The peel is the one we have used to make this recipe

Dals: the dals add volume and depth of flavour to this recipe. I use a mix of skinned black gram dal (urad dal) and chick pea dal(channa dal). When roasted thr dals and ground the dals add the necessary volume to the dish.
Spices:there is very minimal spices in the recipe. Red dried chillies are a huge part if the flavour. The second main flavour comes from curry leaves. Along with the salt, the small pinch of asafoetida added offsets any need for garlic or onion.
Coconut: grated coconut added a softness. The milky flavour of the coconut works well with the ridgegourd. Tamarind: there is a slight hint of sourness that you experience while having this recipe. This comes frontiers dried tamarind that is added andΒ  ground along with the ingredients. It adds a zesty flavour to the dish when having with grains or breads.

Let’s make peerkangai thogayal

The recipe is a medium intensity one where the roasting of dals is the one that can go wrong as it burns easily.

Prep the peerkangai: the peel of the ridge gourd is the one used to make this recipe. However, the ridges have a tough fiber running through them that needs to be removed.

  • Wash and pat dry the riodge gourd.
  • Using a knife or peeler approach of the pointed ridges. This js where the fibres are.
  • Press down the peeler and remove the green skin completely. Save this part of this chutney. Save the spongy part to make kootu or stirfry.

Roast the dals and spices: in a heavy bottomed pan, add the urad dal and channa dal and a tsp of coconut oil. Dry roast this on low heat. Add the curry leaves and red chillies as the dals start turning golden and roast all together till the chillies are crisp and the dals deep golden. Remove this from heat on to a plate and set it aside.

Roast the peerkangai thol: Add the skin. Stir fry this till the peels look deep green and vibrant. Remove and add to the same plate. Let this cool down as well.

Grind the thogayal: once cooler to handle add the roasted dals, chilli,curry leaves, sauteed ridgegourd peel, tamarind, salt and coconut to the food processor and blend into a coarse mix.
Remove the coarse ground mix to a bowl and the thogayal is ready to be served.

Best pairings with peerkangai thol thogayal

Here are a few ideas for you to try with this thogayal
Peerkangai thogayal with steamed rice, a small spoon of ghee and poriyal on the side is one great Sunday meal.
At home, we like this as a side to rasam rice and often with some kootu.
Alternatively, you can use this as a dip for idlies, dosa etc too.
We use this as a spread for wraps and sandwiches. Pretty much the thogayal and cheese sandwich is a great try. Use someΒ  grana padano orΒ  aged cheddar instead of saltier ones like feta.

Meal prep and lunch boxes

Thogayal stays well in the fridge for up to a week without any issues. It also freezes so well, that we often rely on a frozen block for quick lunches. We love thogayal cheese sandwiches for our lunch box. You could also use it to stirfry the rice with, like we made ghee podi rice.

  • salt to taste

Instructions

  • Wash and remove the fibers of ridge gourd.
  • Remove the peels and set them aside.
  • In a pan roast the dals, curry leaves and red chillies.
  • Once they are golden brown, remove on to a plate.
  • Roast the peel of ridge gourd.
  • Let all this cool.
  • Add the coconut, lemon and salt.
  • Grind this mix to a coarse mix.
  • Remove into a bowl and serve.

What is the difference between payasam and prathaman?

For the love of Kerala, prathamans find thier way more often than payasams. Prathaman are a rustic style payasam made with coconut milk and jaggery. The slow cooked prathaman is often made with rice, fruits like plantain and jackfruit or dals. It is a bit thicker than payasam and best served on a banana leaf. This paysam stays good for a couple of days as well.These recipes are made for Onam, Vishu, Christmas and Easter.

Mango prathaman: Ripe mango and jaggery cooked in coconut milk is a seasonal prathaman recipe that is made often during Vishu.

Kadala parippu prathaman: made with Bengal gram the prathamn is a slightly ifferent version from the chickpea payasam.

What is the difference between payasam and kheer?

Though cooked fairly similar, kheer is a smoother and thicker version of the Indian pudding compared to payasam. Compared to a payasam there is a lot of crushed nuts added to the kheers, where as in payasam it is a roasted bunch of nuts and raisins alonv with the ghee that is addded. Very often kheer can be seen served chilled where are payasams are preferably served warm. The differnece exists even in the way they are served. Payasams are served in a banana leaf or glasses with a spoon.however, kheer is usually served in small earthen bowls or any bowl as it is a bit thicker to have.

Past couple of weeks has been so busy that I now look back and think how did we pull it off. Those frozen meals that we keep a stach of was super helpful and depleted pretty fast. Hence emerged easy ideas like this hidden veggies sandwich. Fairly easy to make this sandwich came together in under 15 minutes (use the mincer) and did not fall apart by lunch time. Here is the recipe for you to try

Ingredients to make hidden veggies sandwich.

Cream cheese: the soft cheese that is made with milk and cream is cream cheese. It is spreadable and mixes well with the vegetables to form a good spread. Most cream cheeses have added salt in them. You can us any rand available or home made ones.
Vegetables: my go to mix for this filling isΒ  basically firm salad veggies. carrots, bell pepper (capsicum) and zucchini form a good combination. You can add scallions and radishes too, if you like. The veggies I avoid are tomatoes, cucumber as they leach a lot of water making the filling soggy.
Herbs and black pepper: A good mix of fresh herbs like basil, thyme, oregano are lovely in this combination. You can use fresh or dried versions. Crushed black pepper adds a heat kick to the recipe. You can add pickled ginger or pickled peppercorns too. Red chilli flakes are optional.
Bread: choose one that you like to have. It can be sourdough, panini, foccacia or basic sandwich bread. We have used a multi grain sliced bread to make this batch. You can use wraps or soulaki too.

Let’s make this cream cheese sandwich

Keep the cheese our of the fridge: the cheese when in fridge firms up a bit. If we bring it to room temperature it is easy to mix the vegetables and to spread the mix. You don’t have to leave it out for long, just enough toll it feels soft.
Prep the vegetables: the veggies that go in the mix have to be finely chopped so they mix well with the cheese. This makes them overall spreadable. I use a manual mincer or hand chop them to make them small.
Prepare the cheese filling into the mixing bowl add the chopped vegetables, herbs and cheese.sprinkle black pepper powder and give it a good mix till they arr evenly mixed.
Make the sandwiches: lay out the bread and top it with the cheese filling. Spread it evenly.the thickness of the filling is up to you.Β  Slice it into halves or triangles and the sandwich is ready.

Can we make wraps with this filling?

The filling is the most flavorfulΒ part of this recipe. So it is entirely up to you if you want to make it a wrap, a sandwich or a pin wheel sandwich. Depending on what you want to make choose an appropriate bread.

Can the sandwich be made vegan?

Creamcheese will be the part that needs a change to make it vegan. Dairy free cream cheese or cashew cheese will help you achieve this. I have not personally tried it out yet. When you do, let us know how it matched you taste test.

Meal prep the cream sandwich

Ideally, I will not keep the sandwich for more than a day in the refrigerator. However,the filling stays good for almost a week. So week the filling ready to slather on the bread as we need.

For the filling

  • 1/4 cup zucchini minced or grated
  • 1/4 cup carrot minced or grated

Instructions

  • Thaw the cream cheese.
  • Mince or grate the vegetables and set it aside.
  • Into the mixing bowl add the cream cheese, prepared vegetables, herbs and black pepper.
  • Mix well till they are uniformly combined.
  • Place two slices of bread on a clean surface.
  • Spread a thick layer of the filling on one side of the bread.
  • Close the sandwich and cut into halves or triangles.
  • The sandwich is now ready to have.

Dipping your feet into Korean food? Here’s gochujang fried rice that you must not miss. quick and easy, this brown rice fry is gluten-free,Β  vegan and above all delicious.

The current bonding with my teens is learning the ropes of Korean pop. As I am getting educated on the song list, moves, selfie trends etc my brain runs fueled by flavours. Here is the first and easiest, gochujang fried rice. Hopefully, this imperfect gochujang fried rice version will be accepted by my teens.Β 

What is gochujang?

I am sure you all are familiar with fried rice. Gochujang takes fried rice to a whole new level, the one that you don’t want to put your fork down.Β  Gochujang is a unique fermented chilli paste made from taeyancho Chili peppers. It is not a ground chilli paste like gochugaru, rather has fermented soy paste, glutinous rice etc, that contributes to the umami flavour it develops. Gochujang does not have the fiery flavour of the chillies. Yes, there is the spiciness,Β  yet a bit of sweet mellowness comes from the fermentation. Gochujang is used in combination with gochugaru for heat in many recipes. In this fried rice, we have only used the gochujang to create the flavour.

What rice is best for gochujang fried rice?

Medium to long-grain rice is what is best for making gochujang fried rice. The key idea is that the rice is nonsticky, not a glutinous variety. Today I have used brown basmati to make this recipe. The brown basmati has a bite when cooked and fluffs ups perfectly making it easy to stirfry.

Prepping the rice for the perfect texture

Ideally, soak the rice after washing it for 10 minutes. Depending on the method you choose to cook the rice you will need 1l to 2 times of the water to get fluffy rice. Either cook and drain the excess liquid or use the absorption method. Once the rice is cooked, use a fork to fluff it so the rice grains separate better. To be fair, the best-fried rice makes use of leftover rice as it has dried out a little bit keeping the grains separate, yet soft.

Let’s get cooking

Once you have the rice ready, the gochujang fried rice comes together quickly.
Chop up some veggies you have like onions, capsicum, peas, cabbage, carrots etc. I have used sliced leeks, chopped carrots and capsicum to make it. This keeps changing based on what I have at hand.
Next comes the sauce. So, into the bowl goes gochujang paste, soy sauce andΒ  2 tablespoons of hot water. Whisk this to get a smooth sauce.
I guess you are in ready-set-go mode. Fire up that wok and grease it well with oil. Fry the veggies and add the fluffed rice.Β  Pour the sauce and quickly start mixing. Use two turners to achieve this. So, it is dug and tossed, not stirred. In this way, the sauce and the veggies get evenly mixed without the rice turning mushy. Once all is mixed, the fried rice is ready to be served.

  • 2 tbsp oil
  • 1 tbsp garlic minced
  • 1 tsp fresh ginger root chopped

  • 1/2 cup tofu crumpled
  • 3 cups brown rice cooked and fluffed
  • 2 tbsp gochujang
  • 1 tbsp dark soy sauce
  • 1 tsp Toasted sesame seeds

Instructions

  • Stir together the soy sauce and gochujang paste with a bit of water to form sauce. Set this aside till needed.

  • Chop the carrots, capsicum and leeks. Set it aside.
  • Fluff the cooked brown rice and keep it ready.

  • Into the wok add the oil and let it heat up.
  • Once heated, add the garlic and ginger and stirfry to flavour the oil.
  • Add the tofu and stir fry for minute.
  • Now stir fry the veggies.

  • Once the rice is well coated and heated up, sprinkle the sesame seeds and mix well.

  • Taste test and adjust seasoning or salt if needed.
  • Remove from heat and the rice is ready to be served.

Serving suggestions for gochujang fried rice

The best dishes to serve with this gochujang fried rice are roasted tofu, some spicy cucumber salad. Pair with chilled baesook and the meal is complete.Β

Kothavarakkai poriyal is a basic stir fry made with cluster beans. Valued for its medicinal properties this cluster beans stirfry is a gluten-free, vegan addition to your everyday Indian meals.

The visit to Bengaluru this time has seen so many changes. My mother-in-law is finally hooked on blogger world. She is now curious about the new idea. She was talking about bloggers, YouTubers and plenty more who have daily appearances on her devices. So, the suggestion to be videoed while she was making the daily food was welcomed instantly. So as a start, we have kothavarakkai poriyal from her kitchen.

What is kothavarakkai?

The tender pods of Cyamopsis tetragonoloba are used as a vegetable known in regional languages as guar, gawarfali, the green seed pods that grow in clusters are the product of interest. Grown in crop rotation the guar plant notably provides the legume but also improves the soil by nitrogen fixation. The low-calorie pods are a good source of fibre and potassium.

Did you know?

The much-valued commercial flour improver guar gum is extracted from the endosperm of the mature dry seeds of this plant. This is used in breadmaking, the cheese industry and ice cream manufacture.

Ingredients for this kothavarakkai poriyal

This kothavarakka proiyal is made by my mother-in-law. It is one of the simplest stirfries yet very very tasty. Here is the list of ingredients you need to prepare this
Cluster beans or kothavarakkai is the main ingredient in this recipe. Wash and clean the beans. Remove the beans from the thick stalk. Pinch off the tail as it tends to be a bit chewy. Now slice the beans as thin as you like.
Tempering: the classic south Indian tempering is of mustard seeds that crackle to flavour the coconut oil, a touch of dals (split lentils ) for the crunch, followed by curry leaves and red chillies that further flavour the oil.
Seasoning: the recipe is usually just seasoned with salt. However, if you like it spicy use about half teaspoon of cayenne pepper powder can be added.
Garnishes: the final addition of the freshly grated coconut adds a lot of difference to the dish. Honestly, it doesn’t feel the same with the desiccated coconut. However, grated frozen coconut still manages a good bit of flavour.
Additional adds:
Shallots: sliced shallots can be added along with the curry leaves. This gives a wonderful aroma to the poriyal. However, this is not common in Tambaram kitchens so my mother-in-law doesn’t use it.
Cumin: if you don’t have mustard seeds, use cumin. The cumin (jeera) gives a different flavour to the oil.

  • 2 cups cluster beans chopped

For tempering

  • 1 tbsp coconut oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp urad dal
  • 1/2 tsp Channa Dal
  • 1 small dry red chilli
  • curry leaves we did not have any.

seasonings

  • 1 pinch turmeric powder
  • salt to taste

To cook

  • 1/4 cup drinking water

Garnish

  • 1/4 cup grated coconut

Instructions

  • Wash and trim the cluster beans.
  • Chop the cluster beans into small bits. Set it aside till needed.
  • Into the khadai add coconut oil and set on medium high heat.
  • As the oil heats up add the mustard seeds, urad dal, channa dal and red chillies. Add curry laves and stir fry till mustard seeds splutter.
  • Add the chopped cluster beans and stir fry for a minute.
  • Now add the turmeric powder, salt and mix well.
  • Add 1/4 cup of water and cover and cook for 5-7 minutes.
  • Once cooked, add the grated coconut and stir fry for another minute or two till water is completely absorbed.
  • The kothavarakkai poriyal is now ready.

Serving suggestions

Kothavarakkai poriyal paired with steamed rice, quinoa or millets with a classic gravy like sundakkai thengaarachukozhambu or podipotta sambhar is a perfect South Indian meal.
To make an easy wrap use a spinach phulka as the base and fill up with this poriyal. If you have cooked potatoes mash add it up to give aΒ  filling wrap.

Meal prep and storage

The poriyal can be made and saved for about 3 days if refrigerated. If storing for a week, I avoid adding the coconut. Since the coconut added is fresh add it after thawing. The cluster beans stirfry is not the best to be frozen. It turns a bit rubbery if texture.

A fantastic vegan alternative, walnut mushroom mince is a filling textually satisfying alternative to faux meat. Try out this simple gluten-free, low-oil recipe that is keto-friendly.

Walnut mushroom mince is one of my favourite fillers for tacos and to add to pasta or fill up a sandwich. The idea was developed as just veggies as filling in a taco was never filling, nor gave depth to that dish. When the recipe was meal prep friendly it was one that my friends loved too. Usually, this mushroom mince is what I go for if there is an omni potluck in which I participate. Throw in some store-bought tacos, a simple pico de Gallo and some shredded vegan cheese, and the plan sounds easy and achievable, doesn’t it?

What mushroom is best for this mince?

There are two mushrooms that work well with the mushroom mince. Portebella and the cremini. If you like a meatier version go with portabello. The cremini gives a nicer mouth feel with the walnuts. You can have a mix of mushrooms too. Baby Bella is not too bad, but it makes the mince much softer. Shimenji and enoki are not suitable for this recipe. I have not tried oyster mushrooms for this vegan mince. If it works for you, leave us a comment so we can try it.

Why walnuts?

Walnuts in this vegan mince provide that oily, crumbly texture. Plus it is a good bit of protein with crushed walnuts. The slightly bitter flavour of the walnuts complements the earthiness of the mushrooms. While mincing the walnuts make sure they are not overprocessed. The powdery walnuts leave the texture too soft.

The walnut mince I make is predominantly used for taco filling and nachos, hence I have added flavours that taste towards it in my basic vegan mince. However, the mince base takes up flavours based on how you prefer to spice it up. You can add while cooking rosemary, oregano and thyme if you are just planning to be used in pasta or pasta salad. If making an Indian-based curry add to the mince some grated garlic, garam masala powder, some turmeric, cumin and coriander powders and chopped cilantro before cooking and then cook them. So it is up to your tastebuds how you like this walnut mince flavoured.

  • 1/4 tsp cumin
  • 1/4 tsp crushed black pepper
  • 1/4 tsp red chilli powder

To add fresh after cooking

  • fresh herbs use thyme and oregano
  • Lemon juice as required

Instructions

  • Soak the walnuts in luke warm water for about 15 minutes.

  • Once soaked chop the walnuts and set it aside.
  • Into the frying pan, add the oil followed by the onion.

  • The mushrooms will release the water and slowly cook.
  • When the water from the mushrooms is nearly over, add the walnuts and saute further.

  • Add the salt, chilli powder, cumin and pepper and mix well.

  • Saute and cook till the walnut and mushrooms are well seasoned and cooked.

  • Remove off the heat, add lemon juice and fresh herbs and mix well.
  • The walnut mushroom mince is now ready to be served.

Serving the mince

Just as discussed above in this post this is a fantastic recipe to share with any of your vegan friends.
Taco platter: Put up a build-your-own taco with pico de Gallo, cheese, lemon and some soft wraps.Β  In addition, you can add it to salads or top up your nachos platter with it.
Make a sandwich: onto your slice of bread add some creamy Mayo (vegan-friendly ones are so tasty) a whole heap of the walnut mushroom mince, and some cheese and press it down with another slice of bread. Grill it or use a sandwich press and it is a filling sandwich on the go.
Build a burger: if you have leftover mince, mix it with breadcrumbs and some mashed potatoes so they hold shape. Now make them like a patty and this is your quick and easy mushroom burger patty.
Add some to your pasta: I would totally fork this on pasta to make this a wholesome meal. Mix it into the ragu or add it on top of your prepared pasta it tastes really good.
Make a good Indian curry: if you have some mince, thaw a small batch of buna masala and add the mince to it. Now Cook them together with a bit of water to bring them together. Adjust salt if needed. Garnish with julienne ginger, lemon juice and lots more coriander leaves. Keep the naan ready to mop up the curry.

Meal prep and storage for the mince

The mushroom walnut mince stays good on the fridge for a week. So if it is a busy week the mince will hold up your need for something filling and quick. Keep in an airtight box and use as needed. The mince can be frozen and thawed as needed, however, once you do that the texture changes slightly as the mushrooms are now a bit fibrous.
