Fries will always dominate my comfort food world. It can be potato, sweet potato, zucchini, rutabaga, parsnips, you name itΒ  I will eat them. The one I really crave for in winter is the masala carrot fries.
Carrots have this incredible natural sweetness that caramelises beautifully when you hit them with high heat. By tossing them mix ofΒ  spices you transform this bright orange root vegetable into a highly addictive snack. This dish is naturally gluten-free, vegan-friendly, and packed with fibre and whatever carrots can offer.Β  It strikes that perfect, magical balance between sweet, smoky, savory, and tangy. I bet you cant keep your hands off them.

Ingredients for carrot fries

Carrots: The colour of the carrots chosen to make this masala fries does not matter. you can have purple, yellow or orange carrots though orange is the most popular colour available. Choose firm and thick carrots which are fairly straight. This makes it easy to cut even batons.Β Β 
Oil: though we are not deep frying the oil helps to coat and create the crispy roasted top for the carrot fries. Any neutral oil is good enough like sunflower oil, vegetable oil or avocado oil. If using coconut oil or sesame oil, it will add the fragrance to the fries.Β 
Spices and seasoning: Salt and pepper remains the key seasoning for these fries. The spices that upgrade it to masala fries is cumin powder, chaat masala and the kashmiri chilli powder. Cumin powder adds a smoky flavour, the chaat masala a zing and peppiness and the kashmiri chilli powder a mild spice level. Kashmiri chilli powder is similar to paprika with a tiny bit more spiciness. If you prefer a bit more spice you can use chilli or cayanne powder.Β 

Lets make carrot fries

Preheat your oven to 180Β°C.
Prep the carrots : wash and pat dried the carrots Peel your carrots and trim the tops. Cut 1cm-thick sticks. Try to keep them all roughly the same size so they cook at the exact same rate.
Pat your carrot sticks thoroughly dry with a paper towel after cutting add them into a large mixing bowl.
Spicing the carrots: sprinkle a mix of salt, cumin, paprika and chaat masala on the carrots sticksΒ  Drizzle with oil and give them a good toss.
Spread Out and Bake:Β  Spread the carrots out onto your prepared baking tray. Leave a bit of breathing room between each stick. If they are piled on top of each other, they will steam instead of roast. Bake for 25 to 30 minutes, giving them a good flip halfway through the cooking time to ensure they get evenly golden and crisp on all sides. Be gentle with them at this point.
Once done the carrots turn crisp and glossy.
Remove on to a serving dish and enjoy with a dip.
Can carrot fries get crispy like potatoes ?
If you’ve ever tried baking carrots before, you know they tend to go a bit soft and limp. That is because carrots are packed with water and lack the natural starch of a potato. To beat the sogginess in the oven, use these two methods as nonnegotiable
The Paper Towel Pat-Down: Getting the carrot sticks completely dry before adding oil stops them from steaming in their own juices.
The Starch Dusting: A tiny sprinkle of cornflourΒ  or rice flour acts like an invisible shield. It absorbs moisture and creates a crisp, micro-textured crust as it bakes. Ensure that you toss the spices in with the cornflour before dusting so it coats evenly.

Can carrot fries be made in the airfryer?

Oh yes, follow the steps of prepping and spicing. Then spread the carrots with enough gaps between them. These fries turn out more crispy.Β

Ingredients

for the fries

  • 300 gram carrots
  • 2 tbsp olive oil
  • salt to taste
  • 1/4 tsp Kashmiri chilli powder
  • 1/4 tsp roasted cumin powder
  • 1/4 tsp chaat masala

to finish

  • 1 tbsp coriander leaves

Instructions

For the baked fries

  • Preheat the oven at 180 degrees for 10 minutes
  • Wash and pat dry the carrots.
  • Cut them into two to three inch long and further into fingers
  • Toss in the olive oil, salt and spices
  • Bake at 180 degrees for 10 minutes
  • Remove and flip the fingers over and re bake for another 5 minutes.

While carrying my daughter I was on bedrest for a while. At this time we had hired a cook, a pretty common idea in India.Β  Kailash,Β  the guy was recommended by my sister in law. He was brilliant with his phulkas and sabjis. One day,Β  carving for simple sambhar rice,Β  I asked him to make some. We were surprised when he loaded all into the pressure cooker and fired it up. Though out the process, I was uncomfortable as I have never seen it done this way. With a pleasant smile…he continued. It smelt so amazing as he openedΒ the pressure cooker when the pressure released. He asked us to taste it… Wow!!!! I fell short of words to describe the authenticity of it without all that fuss.
Now, whenever I want a quick one or want to do no more washing up… it is this easy pressure cooker one I resort to it works perfectly in the instapot too.
It is perfect with veggies like tomatoes and onion or even added radish sticks, carrots or pumpkin chunks.Β Mind you, vegetables like okra and drumstick typical to sambhar will not work in this method as they will cool into a pulp by the time the dal cooks. Unlike the Opos method, there is no layering and no precooked dal… So it does take a bit longer time. I kind of like the flower-like formation the dal takes rather than cooked in a mush.Β  With a pinch of added jaggery, it tastes even better( I have omitted it, due to current dietary needs.)

One of the most delicious effortless tropical treats is a cinnamon coated grilled pineapple. It instantly transforms any dull day into a fun one.Β  Equally tantalising is a juicy piece of pineapple with a spicy rub set on a semi char by the grill. The total goodness of the tropical fruit made it even juicier. Except for cleaning up the pokey outer skin, I just love every bit if this fruit.Β  Β I guess this is going to stay awhile with us as our go-to option for difficult days or one where the mood swings act up.Β Β 
I do find this extremely useful when the kids have a bit of a cough coming along. The cinnamon and the pineapple really soothe the throat for them works brilliantly. Enjoy these effortless treats with your kids.

Setting this up for a bbq

The simpler the idea, the better it is for summer. We certainly don’t want to slog over the stove but enjoy the company over the barbie. Here is another we love to add to the list – Grilled radicchio with citrus dressing. Whip up a quick Β Quickest sweetcorn and cheese dip, toast some bread and have some great company. Watermelon rind chutney| thannimathan thogayal

The best part of summer is actually the cold watermelon. Whether it is to bite into the slices or juice it up, the watermelons run from breakfast to dinner. On the flip side, there is so much peel that you are going to waste. Over the period of time, we have found ways and means to add the white part of the rind easily into our meals.
We hide them in juices, toss them in sabji, make kootu curry with it and more. The green peels rarely get used. This is where I find the watermelon rind thogayal recipe useful. Once sauteed and ground you can hardly feel the peel. So an absolute win.

What is a thogayal?

Thogayal (or thuviyal) is a style of Indian chutney that is a blend of lentils and split legumes that are roasted with spices and coconut. The preparation is used as a side dish with South Indian meals.Β  It is a perfect hiding place for a lot of vegetables.

Which part of the rind to use for this thogayal?

When we cut a watermelon it is typically the reddish part that gets eaten. This is the juicier sweeter part. However, the whole watermelon peel is edible too. For this thogayal, you can use the green thick peel or the white and the green peel together. The green thick peel is best used if it is clean and blemish-free. It gives a thick dry thogayal. When using the white part as well reduce the water added coz the white part still has a lot of water in it.

Ingredients for the thogayal

Apart from the watermelon rind, you need a few other things to make this chutney.
Dals or lentils – The combination of urad dal and channa dal gave the base that the watermelon chutney needs.Β 
Spices- Apart from salt, Indian chutneys are spicy, so red chillies invariably are the flavour provided.Β 
Curry leaves and herbs – If you like a fresh flavour, curry leaves are the best addition. you can also add mint leaves or coriander leaves to add to this recipe.Β 
Coconut – I have made this watermelon chutney without coconut. You can use a tablespoon or two of coconut to the mix to give it a different flavour.Β 

What can you hide in this chutney?

I love to add nuts and seeds to this recipe easily. I have added flax seeds to the current recipe. Stirfry some spinach, radish leaves or kale along with the watermelon rind. This is certainly the best place to hide nutritious stuff from picky eaters.Β

The thogayal is typically served with a South Indian meal and tastes fantastic with rasam. Thogayal is a great substitution for classic coconut chutneys with idly or dosa. Tossed with leftover rice, it is a quick lunchbox filler like the pickle masala rice. The watermelon rind thogayal adds a lot of flavour to cucumber salads too.

Meal prep and storage

This watermelon thogayal has been a kept recipe in my meal prep. Firstly I feel happy I did justice to the product and the jar of thogayal early can be incorporated into many meals. The watermelon rind thogayal stays well for up to 5 days in the refrigerator. The watermelon chutney freezes really well and thaws perfectly. I freeze them as cubes so as to thaw just the right amount. Never refreeze the remaining after thawing.

Bisibelebath masala

The best of the mixed vegetable rice variety is bisibelebath from the Karnataka cuisine. The blend of a few additions to the regular sambhar powder mix makes it form a brilliant variation.
I make bisibelebath one a week..and the recipe is one pot, loaded with veggies and can be cooked with rice, millets,Β  rice flakes or grits. No matter what the other combinations are from my pantry, I always rely on homemade powder. The aroma is so different from the store-bought packaged ones and stays well for all long time if packed well.
I love to make and store my masala when the weather is a bitΒ cooler or it’s is a few days of a dull drizzling weather. TodayΒ It looks perfect after a long time. Perfect for all the roasting so, put on your favourite songs and roast away…. So happy masala powder time.
This is the blend I learnt from my paternal aunt- my very first lessons in BengaluruΒ style cooking.Β  I religiously noted down her ideas and suggestionsΒ till my practice zone was ready.

What more can we do with this masala?

This powder is so in unique it transforms not only my bisibelebath but alsoΒ my roasted potatoes or Brussels sprouts into the flavourful side for a dinner party. The best bisibelebathΒ for me is the one with Foxtail millet and loads of fried capsicum and cashew nuts on it. will share mine another day. I have even used the same as a grill rub for my corn and finished it off with a touch of lemon. Try out your combos… don’t hesitate

Vendakka kichadi- okra in coconut yogurt sauce

One of the first ways I learnt to eat yoghurt was when my mom topped crispy fried bits of okra on the vendakkai pachadi. She always used to give me more of these crispy ones if I finish the small bowl of yoghurt soaked ones she gave first. Slowly the deal worked out… I learnt to eat the yoghurt and she could get my plate cleaned up.
With the love for okra running in the blood,Β  my kids are satisfied with this recipe too.Β  From the traditional deep-fried okra bits,Β  the major change we have made to the recipe is to use sauteed ones.
The coconut flavour infused from the fresh ground coconut in the recipe gives a sense of hometown that I miss.
This is also a Sadhya specialΒ pachadi recipe you often see on the right-hand side too corner of the banana leaf meal.
Since this pachadiΒ is a raw recipe it’s the quick way to use up small bits of sauteed leftover okra too.Β  Sometimes we happily pair it with a pulao or as a side dish for chappathi. It tastes best on hot summer days with the cooling feel if yoghurt. Mind you,Β  you cannot leave the prepared dish outside for. Long as it turns sour easily and gets spoiled.

Godhambu dosai, instant wheat crepes.

Instant wheat flour savouryΒ crepes or godhambu dosai is the South Indian downright lazy one. When the mommy in the house really grumpy or had enough of us ( kids) for the day…its godhambu dosai for dinner
The godhumbuΒ dosaiΒ (wheat flour savoury crepes), mix varies from house to house. On my maternal side, it is just wheat flour, salt and water. If we manage to make my mom happier, we get it rolled and filled with a mixture of coconut and jaggery.
Whereas, in my mother in law’s version, there is a bit more added content with buttermilk and a tempering of mustard and chilli sun-dried. A pure savory one.Β  Either way..Β  Have to say this is the best for all the gloomy days when you run out of ideas, have a houseful of kids enjoying their holidays…

I am not the best when it comes to making the godhambuΒ dosai… It’s my husband. He gets these crispy ones off the tawa, they my kids go ga-ga over. There are no counts when he makes them.Β  I just need to keep a large amount of batter ready for him.Then,Β  put up my feet and enjoy what I want to do for the rest of the evening.
β€œHere you go Mrs…..” I hear and I can run to get my hot out of the tawa ones… So truly my lazy day right!!

Pretty much all of us will be having get-togethers and parties. If you have your resolutions ready,Β I am sure you will strive to stick with it. I want to eat healthier…. so let’s begin this year with a bit of easy eating.
I love the nibblers at cocktail parties. More-so, I love the cheese platter.Β I noticed that my kids love the cheese platter too. The most eye-catching ones, of course, have a bit of colour from the fruit and a good quality cheese to pair with the drink. Going by that and steering away from the traditional cheese platter this time I decided to keep it simple,Β  a bite of all the things you will find on a cheese platter in a tiny bite.
This was fun to assemble,Β  with the kids wanting to help out it was perfect.
Cheese,Β  grapes,Β  basil and saltines… done.
Needless to say, it was loved by all. Luckily we had good stocks of the ingredients for a quick second round.
when you choose cheeses for the cheese plate make sure you have a couple of good quality cheeses. Here I have provided Brie and Gruyere. You could choose from great ones which pair well with the wine you are serving.

Many a times when using oats I have heard people say I don’t like to cooked sticky porridge. .so I don’t use it.On the contrary to this thought, I would say learn to substitute instead of rice or wheat in tryout regular diet. One such major change I do is an easy one.Β  A simple essential curd rice where you can easilyΒ  substitute the rice with millet or oats.
Now, with a fancier nameΒ  β€œbagalabath” borrowed from the maharashtrian platterΒ  the humble yogurt and oats transform into a sought out dish from my kitchen.. I like it too.Β  Somehow the addition of grapes or pomegranates brings in a sweeter element to the otherwise simple combination.

Why oats?

I am sure by now… By every alternate hour of advertisements our children also subconsciously register… We all know this is heart healthy because it has fibre. Let’s look for some more…

  • Oats was predominantlyΒ  cultivated as fodder. For livestock.
  • Β It is low in calories
  • Oats is gluten free if processed in factories that do not process wheat. Watch out for aveninΒ  sensitivity though.
  • This grain boost the growth of beneficial bifidobacteriaΒ  in the intestines.
  • ItΒ  doesn’t leave much room for craving as it swells up.. Yes, because of the fibers in it
  • The balance between fiber and complex carbs helps slow release of sugar and hence useful for diabetics
  • It contributes to beauty by supplementing the daily requirement of biotin for great looking nails and beautiful hair.
  • The beta glucan helps reduction of cholesterol

When I got the invite to do the β€œShhh cooking challenge ” I was thrilled. Researching and creating a Bihari recipe with Mayuri who blogs at this beautiful spaceΒ as my partner was really fun.
From Mayuri,Β  I received black gram and mustard oil as my secret ingredients. Being SouthIndian… Black gram was friendly to me,Β  but the mustard oil was new to my pantry.
Mustard oil is predominantly used in the cuisine from the Eastern part of India. I fell in love with the pungent smell of mustard oil as I was cooking.Seriously glad that my household liked it too. A check on the benefits of mustard oil… highlighted some very interesting points.

Mustard oil

  • Heart-healthy as it helps to raise HDLΒ  cholesterol over LDL.
  • Being a natural stimulant mustard oil enhances digestion and improves appetite.
  • Selenium in the oil reduces inflammatory effects.
  • Omega 3 fatty acid content in the mustard seeds boost health and hair growth
  • Reduce bacterial infections in the colon through their antibacterialΒ  properties
  • The antibacterial and antifungal properties help in promoting oral hygiene
So, with that sorted, I moved on to figuring out what best way can I showcase these two elements.
Bihari cuisine is well known for the unique combinations of spices. The tadka or chaunk is the characteristic β€œpanchphoranβ€œ- A mix of cumin,Β  fenugreek,Β  mustard, caraway and nigella seeds.Β  It’s truly fragrant and it breezes through the mustard oil…..
As I was looking for ideas I did chance upon the steamed pithaΒ with channa dal. Yumm.. Now that what I wanted to do .Β  I have followed the recipeΒ  (nearly) fromΒ here.
To enhance the fibre content I have used whole black gram..in the filling and have no channa dal at all.
As I was making the recipe, I realised the outer covering is similar to the ” kozhakkataiΒ recipe we do in the south and the steaming process too. But,Β  have to say the filling is more sumptuous and fragrant.

I did the rice flour dough the way we do kozhakkatisΒ and did not start with the elaborate one from raw rice.
I froze some of the fillingΒ and completely made ones to see the results.Β  The filling was perfect upon thawing and the prepared pitha needed steaming again.
Nevertheless,Β  a good choice for lunch box and a filling guiltless addition to my menu
Am glad I tried this one… Now really more confident with the panchphoran and mustard oil.

Thinai Kara Pongal- onepot foxtail millet recipe

My ven pongal recipe is pretty much learnt from my mother in law. She makes a creamy venpongal for breakfast and serves it with jaggery.Β  The reason why I still call hers venpongal and mine as Kara pongal is because there is a small change in the tempering ingredients which to my taste makesΒ  a big change.
Once I realised the pongal is the easiestΒ  one pot recipe I can do… And pretty much balanced with carbs and protein… There were umptyΒ  number of experiments with grains and lentils.Β  Some I call as khichdi, and some as kara pongal
Though the pongal is a perfect breakfast item with respect to me…. It kind of raises a few eyebrows in my house and a few more… β€œI am too sleepy,Β  so don’t want to eat. ” The same if servedΒ  for lunch with a big bowl of sambhar and this problem totally vanishes. So why not.Β  It perfectly makes a happy day for me
I love this easy pressure cooked version as it quick and one pot to prepare.Β  The additional handful of the lentils added is always welcome.
While cooking Kara pongal,Β  I pretty much reduce the quantity of ghee that goes into the pressure pan and the tempering.. Coz its quite heavy as a dish with loads of ghee.. Though in the days we return from a hike I allow the kids an extra dollop of ghee on it.. Here I would like to say,Β  the taste does alterΒ  a big much if you reduce on the ghee.

In this version I have used thinai, kangi, navane, thina or fox tail millet.Β  Slightly yellow in colour thinai arisiΒ  is easily digestible and helps in control of cholesterol an triglyceride levels in the body.
Though considered a grain this is actually a seed..and that follows more benefits.Β  Being gluten free,Β  and diabetic friendly the use of thinaiΒ  in this recipe makes it a good meal for people with coeliacΒ  disease. As a millet it is rich in vitamins and minerals too.
So now loaded with information let’s move on to the recipe.

This recipe can be prepared using,Β  white rice,Β  brown rice, kodo millet (varaguΒ  arisi) or Barnyard millet (kuthiravalli) or little millet (saamaiΒ  arisi) too. So go on with this beautiful traditional age old recipe and enjoy.

Try out this spicy, tangy gravy to give that unique touch to your South Indian thali. The tangy sundried mango curry is one that fires up a dead tastebud to life. Here is the vegan, nut-free, nightshade-free, coconut free recipe for you to try.Β 
Mums and daughters always have some special shares. Mine happens to be the kozhambu made with sundried mango vattal. This was our kind of meal when dad was travelling or did not want lunch for the weekends. Though the meal was simple, I loved it. The lip-smacking tangy curry with steamed rice and crispy vadams and vattals. That is all I needed to tell her she is the world’s greatest mum! She has always been.
Today’s share is her recipe for this unique maanga vattal kozhambu.

What is a vattal kozhambu?

The curry or kozhambu made with sundried vegetables or berries is called vattal kozhambu. Spiced with a spice mix similar to sambhar powder, this curry is a slow cook recipe. With tamarind as the curry base, the tempered spices and the dried veggies cook down imbibing the flavours.

How is this maanga vattal kozhambu different from the rest?

Ideally, this vattal kozhambu is what we call a parippu potta vattalkozhambu, where cooked lentils are added. This thickens the gravy, and reduces the heavy oil use compared to traditional vattal kozhambu formulas. Other than that, the mango vattal you make makes a huge difference. Since mango vattal is sour already, no tamarind pulp is added. The complexity of flavour comes from balancing the intense sourness from the spicy masala base.

Since the curry is spicy and tangy you want to pair the maanga vattal kozhambu with less spicy sides. Typical South Indian combinations are this maanga kozhambu with steamed rice or fluffy cooked millets. On the sides, aΒ  salad like kosambari, warm mezhukkuperattis or kootu curry pairs deliciously with this. The maanga vattal kozhambu is an excellent side to idlies and set dosa.

ChristmasΒ  is a borrowed festival which I love to celebrate. First of all.. There’s is a special place for the Christmas cake and then there is Santa. Aren’t they good reasons to have some good spirits.

I really enjoyed the Christmas countdown during my days in Philippines. Everywhere people were gearing up for gifting, decorating, helping the community and celebrating. I love decorating the tree and soaking the fruit.
In the midst of all that i kept looking for the lovely Kerala style ChristmasΒ  plum cake..
Finally came across an old snap piece of paper which my mom had hand written the recipe during one of my visits. That was a preparation with proper soaking and eggs.
This was a uniqueΒ  preparation, with a mild aroma from the cinnamon and cloves and with sweet bites of dry fruit. A hint of vanilla with the orange rind all made this cake so complex.Yet the cake is soft and crumbly to the touch.
Tweaking the recipe to its best over multiple trials here we are with the egg lessΒ  alcohol free Christmas plum cake.

I did try various methods to soak the fruits but always felt the lingering taste of alcoholΒ  in them… Which I really did not like.Β  Then came a long a simple solution. Made the almost perfect bakeΒ  too good. Now, this eggless alcoholΒ  free version of Christmas plum cake is in super demand. It’s the second one I am baking this week… On demand.
Honestly I find this better than the doughy ones last time I bought out of greed from the store.

Tricolour crispy tofu wrap

If you are a tofu lover or a beginner, you will actually start liking these wraps for a couple of reasons

  • They dont feel so tofuy so its fairly easy for you to adapt into them.
  • These wraps come together in under 20 minutes and don’t need any marination.
  • They pack in a good balance of protein, carbohydrates and veggies.

If these sound good to you, lets get you started.

With the approach of autumn,Β  the sunrise is slowly getting later and later, we have started to slowly wake up late. This means it is then a mad scramble to get things done and all of us out of the door on a weekday. So having something that will roll quickly into a nutritious meal is welcomed. There are a couple of wraps that I know my kids will surely grab as they run out of the door. These are also the ones that my teens never had a reason for missing out on the eating. These are

There is another reason why these are sure to be taken without the excuse of β€œOh ! I forgot my lunchbox”. These are so much smaller when packed, so bags are less clumsy. Whatever the reason, these do get taken, eaten and are a fully balanced meal. So what is here not to love it.

Here are the details.

Ingredients to make this tricolour wrap

Before you start making wraps, you need to keep in mind that wraps are only as interesting as the flavor of the filling. So lets keep this one interesting.

Wrap:Based on the time you have you can make a roti like flat bread or use a store bought wrap. I use Helgas or Mission wraps as these are the closest to me.Β 

Tofu: You need firm tofu or extra firm tofu for this recipe. This ensure it will crisp up well and hold shape. If you have firm tofu and are planning your meal ahead, use a tofu press to ensure you get a perfect tofu. once this is sliced, salted and roasted these stay good for lunch. To make the tofu crispy, you needΒ  few ingredients cornflour, breadcrumbs and salt. These three ingrdients coat the tofu to make it crunchy.

Veggie: I have used shredded carrots and baby spinach to make this recipe as this is what I often have at hand ready to go. If you prefer, you can add shredded cabbage, colored capsicum, cherry tomato, celery or avocado. You can use a bagged salad or a coleslaw mix as well to make the wrap. This is a pretty good shredder to use for carrots and cabbage.

Sauce: This is probably the simplest sauce you would have made without any compromise on flavors. It takes only two ingredients – a good quality chilli oil and thickened cream. Once you adjust the salt levels, I will put this on anything from toast to pasta. The sauce is useful as it will not run by afternoon and not make your wrap go limp.Β

Honestly, if you have a great frying pan, you are set to make this recipe. I have this frying pan and love it to fry tofu, it does not stick much as well. I use these pre-cut parchment to wrap the rolls for lunch.

  • 4 medium wholewheat wraps

for the salad

  • 200 grams carrots shredded
  • 200 gram Spinach

for the tofu

  • 250 gram firm tofu
  • 1 tbsp Corn Flour
  • 1/2 cup breadcrumbs
  • salt to taste

for the dressing

  • 1/4 cup thickened cream
  • 1 tbsp chilli oil

Instructions

  • Remove the tofu from the packaging.
  • Wash and pat dry and slice the tofu into thick long chunks.
  • Make a slurry with cornflour and salt.
  • Set your pan on medium heat, spary a bit of oil on it.
  • Dip each tofu block in the cornflour slurry, then roll in bread crumbs.
  • Place the tofu on the medium warm pan.
  • Don't move it much till the side is crisped and the tofu piece moves easily.
  • Then flip and cook another side.
  • Once all sides are crisped, tofu is ready, remoe and set aside.
  • Warm up the wrap on a flat pan.
  • Place the spinach and top it with shredded carrot.
  • Place a couple of pieces of the crispy tofu on it.
  • Whisk together cream and chilli oil.
  • Drizzle the dressing on the tofu.
  • Fold the sides of the wrap and roll tight.
  • Wrap is ready.

Shed your dislike for Brussels sprouts and try this baked version with sweet maple syrup to take over your tastebuds. This roasted Brussels sprouts ensures that this underrated vegetable reaches your plate easily.
Once winter sets in roasted or baked vegetables are such a delightful addition to the meals. Lots of veggies, warmth from the oven and the kind of attention the kitchen gets and it feels like home. I guess this is the whole reason why these are the top-rated recipes for the holiday season and thanksgiving. Being on the opposite hemisphere, ( Australia), Brussels sprouts become more of a Christmas in July recipe than for Thanksgiving.

Brussels sprouts| what are they?

The edible buds of the Gemmifera cultivar belonging to the cabbage family are Brussels sprouts. The slightly green tight leafy buds, about the size of pingpong balls areΒ  obviously,Β  the name gives away where it was popularly grown.The look like mini cabbages when sliced and peel like the cabbage leaves in miniature sizes. It comes on a long stalk, but at the supermarket, you may just get the buds. ( source)
Towards late autumn, these buds are harvested in larger numbers and hence was introduced as a thanksgiving essential.They are served often as salads, pan roasted with balsamic, baked or boiled. We have added them to a baked pasta recipe with a creamy sauce
Being a part of the cabbage family, they are rich in sulphur compounds and therefore, carry a bad reputation for being bitter and unpleasant. Predominantly,Β  this comes from over boiling them or over cooking them, which releases the sulphurous compounds and the resultant unpleasant taste.Β 

How to prep some Brussels sprouts?

  • The loose outer leaves and excess stem are clipped away and these easily burn while roasted leaving an unpleasant taste.
  • Soak the sprouts in water for about 5 minutes, wash them and set them to drain.
  • Pat dry and the sprouts are ready for use.

How do these roasted Brussels sprout taste?

Brussels sprouts tend to become soft in the centre when roasted, yet the outer leaves are crisp. This combines with the sweetness from the maple and a few spicy hints from paprika take off any bitterness that you may expect from this vegetable. The end result is slightly smokey, slightly sweet complexity of flavour. If you are still on the fence, try it and don’t be scared of this lovely vegetable.Β

Brussels sprouts: Once the sprouts have been cleaned and prepped, it is just slicing them in half.if you havent read above, the cleaning tips are outlined.
Oil: Good quality neutral oi. I use olive oil or rice bran oil. However this need not be very specific. You can choose vegetable oil, coconut oil or any other that you are used to.Β 
Sea salt: I like flaky sea salt for this recipe as it has a depth of mineral content than table salt.
Maple syrup: The maple syrup fragrance while baking will remove any unpleasant odours while the sprouts cook. It will also take away the slight bitterness that these sprouts may have.
Spices: to spice it all up the faint hint of paprika that last hits the mouth make all the difference in flavour.

For roasting

  • 250 g Brussels sprouts
  • 1 tbsp coconut oil
  • Sea salt

For flavour

  • 1 tbsp maple syrup
  • 1/2 tsp paprika
  • 1 tsp Lemon juice

Instructions

  • Preheat the oven at 180 for 10 minutes
  • Cut off the knobby ends of the Brussels sprouts and remove any discoloured leaves.

  • Wash pat dry and slice them in half.
  • Add the sliced sprouts into a mixing bowl and add oil and salt and gently rub till the sporuts are evenly coated.
  • Arrange this on the baking tray.
  • Mix together the maple syrup, lemon juice and paprika.
  • Remove the half roasted Brussels sprouts from the oven.
  • Brush the maple mix on the sprouts and place them back to bake.
  • Bake till the centre becomes a bit soft at 180 degrees for about 10 minutes.
  • Remove the baking tray and scoop into a serving dish.
  • Enjoy the sprouts warm.

Nuts – walnuts or pecans chopped or broken bits of nuts after roasting the Brussels sprouts add so much crunch and nutrition. The subtle sweetness of maple works with the nuts really well.
Sweet potato – The soft roasted sweet potato is by far the best add on roots vegetable to this roast. I love the colours of the two together as it just screams autumn for me.

Furthermore, you can add carrots, parsnips, cauliflower too to make this a huge bowl of roast. If you pass the bowl to me, I will still pick out all the brussels sprouts before I choose the others.

The underrated cabbage seems to have shot into limelight. This probably is triggered by the article in Vogue promoting it to be the vegetable for 2026 and it is high time these leafy vegetables get some real use. It certainly is versatile and incredibly easy to use in most cuisines.

Familiarize yourself with the Cabbage varieties

The big head of cabbage does actually comes in a few different types, providing a bit of textural and pigment variation.

The common white cabbage: this is the most versatile of all cabbages. They are perfect for all sorts of recipes, mellow and crispy and sit well in salads too. Put these on the grill or tandoor to chargrill.

The red (or purple) cabbage: these are very similar to the white cabbage. It is the colour that attracts the eye. The red cabbage is usually seen in salads and as pickles. However they are equally good when stirfried or braised too.

Savoy (crinkled) cabbage: what is interesting about this variety is the crinkly texture of the leaves. These are great to filled and rolled to make skinny enchiladas!

Wombok: This slightly sweet Chinese cabbage or Wombok is perfect for Asian dressings and stirfries. They are super tasty as kimchi and pickled cabbages. For Indian recipes, I love using wombok for poriyal and kootus as it curls up well, providing a good textural feel.

Bokchoy:Though not typically considered a part of cabbage bokchoy falls under the cabbage family.Most Asian recipes do call for he green leafy bokchoy. They are more green and tender. The flavour is brilliant in Asian style soups and stirfry.

The love-hate relationship with cabbage

You certainly would have come across a bit of a love-hate relationship with cabbage.Some people love it and some are averse.Β Knowing the science behind it will ensure you know the reason for your dislike.

Cabbages are a part of the cruciferous vegetable family. They are naturally rich in sulfur compounds like glucosinolates.
When cabbages are cut or cooked they release these compounds as volatile sulfur gases. This is the weird fishy smell you may encounter. This may be the reason some people dislike the cabbage.Β

Reasons to love the cabbage

Though there is dislike for cabbages among some, there are several more wonderful (and delicious) reasons to love it!

  • Cabbages are low calorie vegetable. It is also nutrient dense. That makes it perfect to add volume to your meals.
  • It carries high levels of fibre that ensure fullness and avoids constipation.
  • Cabbages are good source of vitamins C and K . Both fresh and cooked cabbage are rich in them!
  • Cabbages are diabetic-friendly as they are leafy vegetable, meaning they are low in sugar content.

  • As for taste, they have a mild sweetness and are crisp to bite when fresh. When sauteed or grilled , they retain the sweetness.

Tips to cook the cabbage right

The sulfur smell that comes from cabbages can be reduced by following these.

  • Use lemon juice: when you add lemon or vinegar to the shredded cabbage it greatly reduces the smell that develops. You can also add an acidic agent to the cooking water instead.
  • Using an open pan: To saute or stirfry use an open pan and dong cover, and cook. This ensure the volatile compounds can escape.
  • Quick cooking: Instead of slow boiling, always resort to quick boiling methods when using in soups. Slow cooking any of the cruciferous vegetables releases the sulfur compound, causing the smell.

Alu kangmet | Manipuri potato mash

While trying to explore the diversity of cuisines across India, one root vegetable that gets so well used is the potato. May it be jeera aloo, urulakizhanagu stew, potato podimas or aloo dum biryani, you will find potato running its own show here. This pattern extends to all the Indian cuisine styles and the one that caught my attention recently was the Manipuri spicy alu kangmet.

What is alu kangmet?

Though the name sounds so complicated this is one of the simplest of the Manipuri cuisine. Basically it a spicy, mashed potato recipe. The ingredients that flavour are mustard oil, chillies, garlic scapes and ngari (fermented fish). in this vegetarian version, we have omitted the fermented fish. The raw onions served with it or mixed in as pieces with the mash flavour it different from classic mashed potatoes.Β 

Dietary profile for alu kangmet

Traditional alu kangmet has fermented fish paste added to it so it will not really be a vegan vegetarian recipe. However, the recipe we have made today is with most of the flavours without the fish paste making it vegan.
The recipe uses a bit of oil, but not enough to deep fry so I would say they are still low-oil recipes. However, don’t skip using mustard oil for the best flavour.
The aloo kangmet is certainly grain-free, nut-free and nightshade-free.

Ingredients and substitutions

Potatoes: The potatoes are the main ingredient for this recipe. Any variety of potato that cooks soft and mashes well like the Yukon gold or white potato is perfect for this recipe. You can use the same variety that we have used to make jeera aloo.

Garlic greens: The traditional recipe for alu kangmet uses green onions rather than regular onions. I had a small batch of green onions and that is what I have used for this recipe. If you don’t have any red Spanish onion or sweet pink onion can be substituted,Β 

Dry red chillies: Ooo this is a spicy recipe that packs in a punch. The dry red chillies roasted in oil are the ones that are mashed in with the potatoes. Use the spicier serrano dried or the milder bydigai (Kashmiri chilli)

Mustard oil: The mustard oil is absolutely needed to bring that classic Manipuri flavour to this dish. You will find these in the Indian grocery stores. Most of them say external application only, but read through and you will notice that it will be used for cooking in certain cuisines. The restriction is because of the high euric acids. There are tolerable limits established in certain countries that are deemed safe. The quantity used for this recipe is really small and under regulatory limits. If this is not an option for you, try olive oil or vegetable oil. I will not recommend coconut oil or sesame oil as it imparts a distinct South Indian flavour and takes away from the recipe.Β Β 

Salt: Can’t make this spicy mash without salt! Regular sea salt or Himalayan pink salt will make just the same.Β

Let’s make alu kangmet

There are only a few steps that lead you to this spicy lip-smacking potato mash.

Prepping the potatoes: Boil and cool the potatoes. Peel them, gently mash them with a fork and set them aside.Β 

Making the spicy mix: Wash and clean the green garlic leaves. Remove all the dry leaves and chop them half half-inch pieces. Into a frying pan add oil and as it warms up add the mustard oil. Saute the green garlic
(garlic scapes) and then the dry red chillies till they are crisp.Β

Bringing it all together: Add all this to the potato and mash the spices into the potatoes with salt. roll them up into small balls to serve with rice.Β  In the recipe card below are the details of this recipe and you can pin from here too to your board.

Serving aloo kangmet

Aloo kangmet is often served with tan (bread) at breakfast time. However, the small ball of aloo kangmet is so soothing to have with rice. If on a soft diet have this with porridge or congee.

Meal prep alu kangmet

Aloo kangmet stays so good for 2 to 3 days in the refrigerator to have for the week, However, potatoes leach water and lose that soft texture you don’t want it frozen.Hence, I haven’t quite come to be successful in freezing this recipe.

Equipment

Ingredients

  • 3 medium potatoes boiled and peeled
  • 5 tsp mustard oil
  • 2-3 heads garlic scapes cleaned and chopped
  • 5 dry red chillies stalk removed
  • salt to taste

To serve along

  • 1/2 medium onion sliced

Instructions

  • Boil and peel the potatoes.
  • Mash them a bit by a fork and set aside.
  • Into the frying pan add the mustard oil.
  • On medium heat roast the cleaned and chopped garlic scapes.
  • Add the red chillies and roast them on low heat till crisp.
  • Add the spicy mix to the potatoes.
  • Sprinkle salt and mash further, till they come together as a ball.
  • Taste test and adjust salt if needed.
  • The alu kangmet is ready to be served.

Sugar plum crumble
Put on your PJ’s,get your loved ones together, sink your spoon and scoop up some warm jammy plum with the cinnamon flavoured crunch top. You have got yourself the best version of aΒ  no added sugar dessert. Check out this sugar plum crumble and enjoy every bit of it.
Early this year my husband has decided to finally launch into following his diet plan. It is not a massive one, just one where we are going to watch how much we tuck in and see if we can occupy that with sensible options. Given that we are going to crave for something sweet to reward ourselves in this journey, i am planning to test out some options where we still feel dessert is taken care without the massive sugar loaded in . The first of this series probably is best served for Valentines day. This sugar plum crumble is a thoughtful one, save it.

Ingredients to make sugar plum crumble

This recipe has no added sugar or sugar substitutes. It entirely relies on the sugar plum to give it sweetness and flavour.
For the filling: the filling is just a whole tub of sugar plums. These sugar plums are smaller than the regular plums, slightly oblong and have a purple skin. The flesh is usually a pale yellow colour. The flesh is softer and juicer. We usually make jam with these plums as it takes no sugar or pectin to make them.
For the crumble topping: the topping used in this crumble is slightly different than the classic ones or the one we have used to make the mulberry crisp recipe. Here we have used an equal mix of flour and almond flour. To this mix we have added a bit of rolled oats, flax and chia seeds. This gives a bit of bite and crunch.

Gather the equipment and baking dish

As with any baked recipe a mixing bowl is so essential. Here ae the ones I recommend.
Measuring cups and mixing bowl ofcourse are needed to ensure the recipe is repeatably a success. Here are the ones I have here in Australia.
As for the baking dish,Β  I have used ( and in the photograph) this traditional flan style ceramic dish.
Another really important one to keep at hand is a fruit knife. You can have it as a block or an individual good one.

Lets make sugar plum crumble

This is fairly a beginner baking recipe and the steps are fairly lesser. Hope you like making it.
Prepping the sugar plums: the sugar plums unlike the regular plums are hard to get in two halves. Especially when they ripe as they are very soft. So i prefer slicing off the two cheeks and then the sides. You can cut the into wedges as well.Β 
Once sliced, layer the pieces on the baking dish.

Serve the sugarplum crumble with some nectarine fizz or blackberry lemonade or peach iced tea.

Ingredients

For the filling

  • 450 grams sugar plum

for the filling

  • 1 cup almond flour.
  • 1/2 cup whole wheat flour
  • 1 tsp flax seeds
  • 1 tsp chia seeds
  • 1 tbsp oats rolled oats preffered

Instructions

  • Wash and pat dry the sugar plums.
  • Slice and remove the pit from the flesh.
  • Place the flesh in the baking dish.
  • Preheat the oven at 180 degree for 10 minutes
  • In separate bowl, mix the ingredients for crumble.
  • Sprinkle this filling on top of the filling.
  • Place the baking dish in the oven.
  • Depending on the quantity of juice in the fruit, it takes about 20 to 35 minutes.
  • When the crust is golden and the fruit juice all bubbled up on the sides, the crumble is ready to be taken out.
  • Remove the crumble from the oven.
  • Serve with cream or icecream if preferred

Meal prep and storage

I love to bake a crumble and pop it in the fridge after cooling to last the week. Mid week when workload gets heavy is when I actually love a scoop. You can leave it covered in the baking dish itself in the fridge. The corning ware bake and serve sets are really awesome for storing this. I love the chip resistant nature of the bake ware too.
I have not focussed on freezing it for longer, so if you have do share the knowledge.Β 

What if you need a regular sugar levels?

You can toss in a table spoon of sugar with the plum and an extra table spoon on the crumble topping and then bake if you need regular sugar levels.

Can I make this recipe vegan?

The main ingredient that is not vegan in this recipe is the butter. If you swap this for vegan butter or coconut oil, the recipe becomes vegan.

Why are sugar plums better in this recipe?

I prefer using sugar plums to make crumble especially when i am not adding sugar. This is because the natural sweetness of theirs is enough to have as a dessert when jammy. With the regular plums, you could do the same with black plums. However, I don’t really trust the red ones as they can be sour at times and then you need to add sugar which defeats the purpose of this recipe. Taste test the plum and chop in some dates for sweetness.
